The start of school means the end of summer, right? Right?! I have to say, that I have just about reached my limit on the heat over here in Texas right now. And I am more than ready for the cooler days of fall that are headed our way. Hopefully sooner than later. It's 100 degrees + here right now and I just can't anymore.
I'm hoping I'll be setting the tone for fall with this Pumpkin Spice Bacon Wrapped Chicken Tenders. What? Pumpkin spice and chicken tenders? Yes! I promise you that it's nothing to be scared of. It's a little outside of the box, but amazingly delicious and is so so SO easy to make with just 5 ingredients. I'm serious, y'all. Just count them!
So first let's break it down. What exactly is pumpkin spice? Well, it's a bunch of spices. (Cinnamon, ginger, nutmeg and allspice. That's it.) Nothing sweet in there, so let's just nix that from our minds there, shall we? Swipe. Gone. Boom. Done. There is no reason that we can't use pumpkin spice in a savory dish. We aren't breaking any rules here. We're not going the sweet route today. Oh, no-no! We're going savory.
Well, how do we do that? We add a little friend that I like to call bacon into the mix. Wright® Brand Bacon that is. Wright Brand Bacon is truly my favorite brand of bacon. It's delicious and they have some amazing flavors such as Naturally Hickory Smoked Bacon, Applewood Bacon and even a Double Smoked Bacon, to name a few.
Wright Brand Bacon varieties are also premium, hand selected, and hand trimmed. Today, I'm using the Wright Brand Naturally Hickory Smoked Bacon because I know the flavor will pair beautifully with the chicken and our spices.
That's another thing we're doing. We're adding an extra kick-in-the-pants to the pumpkin spice blend by adding in some chili powder. Of course, we're not adding enough to make it super-hot, but just the right amount to keep us going strong in the savory department.

• 10 Boneless Skinless Chicken Tenders
• 10 Slices Wright Brand Bacon
• 1 Tbsp. Chili Powder
• 1 Tbsp. Pumpkin Spice Seasoning
• Salt & Pepper to Taste
Directions:
Preheat the oven to 375 degrees F. and line baking sheet with foil or a silicone baking mat for easy clean up. Place a baking rack over the prepared pan. Combine the 1 Tbsp. chili powder and 1 Tbsp. pumpkin pie spice into a shallow dish or bowl. Wrap each chicken tender with one slice of bacon. NOTE: Feel free to use a toothpick to hold the bacon in place if need be. Coat bacon wrapped chicken tenders with the spice mixture and place them on to the prepared baking sheet. Place the pan into the oven and bake for 20 to 25 minutes or until bacon is crisp. Remove from the oven and divide evenly among plates. Enjoy right away!
