Mixed Berry Chia Jam (Sponsored)

My mom and I are all about themes, and anyone that knows the two of us will tell you that through and through. Whether it's birthday parties, get togethers, or sometimes even just movie nights at home. It's a trait that I'm instilling in my daughter too as she gets older.

One of my little one's favorite movies of this summer, Minions © 2015 Universal Studios. All rights reserved., just came out on December 8th to own. I just knew that we were going to have to whip up a fun family friendly movie night in honor of it. So, Illumination Entertainment's Minions movie is the inspiration for this Mixed Berry Chia Jam.

For me, the first thing that comes to mind for me when I think of those cuddly little yellow characters is that famous jam scene. The one all about Mr. Gru's Old Fashioned Jelly in Despicable Me when we're first introduced to the minions.

I wanted to take the idea for Gru's jelly and create something similar that was not only better-for-you than a typical jam, but also delicious and easy enough that my 5 year old could help me make it!

I've made a chia jam before, so I knew it would be the perfect way for us to make our new 'jelly'. My goal here was to make something so tasty that even the minions would approve, since clearly they didn't like the one that Gru made.

Although you could use this jam in many different ways, I decided to serve breakfast for dinner along with our Minions themed movie night. Hey, I had to get bananas in there somewhere! This jam would also be great over ice cream, used as a filling for cakes or cupcakes, or even merely by the spoonful. Hehe.

This jam turned out great and leftovers can easily be stored in an airtight container in the refrigerator for up to a week. If you can manage to get it to last that long even. It's sugar free, pectin free, and gluten free too. So all in all it's a guiltless jam that you can feel good about enjoying!

The Skinny:
Servings: 12 • Size: About 2 Tbsp. • Calories: 18.5 • Fat: 0.4 g • Carb: 3.5 g • Fiber: 1.3 g • Protein: 0.4 g • Sugar: 1.7 g • Sodium: 0 mg

Ingredients:
2 C. Frozen Mixed Berries, Thawed
2 Tbsp. Chia Seeds
1 Tsp. Vanilla Extract
Stevia/Honey to Taste, Optional

Directions:

Combine everything into a blender or food processor.

Blend until well combined.

Awe, isn't my minion movie tin so stinkin' cute?

Enjoy right away or store in the fridge for later!
