Maple Pudding Cake
Ingredients
- 2/3 C. Chopped Nuts
- 1/4 C. Butter, Room Temperature
- 1/2 C. Packed Brown Sugar
- 1/4 C. Stevia Brown Sugar Blend
- 1 Whole Large Egg
- 1 Tsp. Vanilla Extract
- 1 1/2 C. Flour
- 1 Tsp. Baking Powder
- 1/4 Tsp. Salt
- 3/4 C. Fat Free Milk
- 3/4 C. Packed Brown Sugar
- 3/4 C. Stevia Brown Sugar Blend
- 1 1/2 C. Water
- 1/2 C. Real Maple Syrup
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8 or 9x9" baking dish with non-stick baking spray. Sprinkle the 2/3 C. Chopped Nuts into the bottom of the dish and set aside.
- Place the 1/4 C. Butter,, 1/2 C. Packed Brown Sugar, and 1/4 C. Stevia Brown Sugar Blend into the base of a stand mixer fitted with the paddle attachment. Beat at medium-high speed until light and fluffy.
- Beat in the 1 Whole Large Egg and 1 Tsp. Vanilla Extract until well combined.
- In another medium bowl, whisk together the 1 1/2 C. Flour, 1 Tsp. Baking Powder, and 1/4 Tsp. Salt.
- Add the flower in three additions alternating with the 3/4 C. Fat Free Milk. Mix until just combined.
- Transfer into the prepared baking dish and smooth into a single layer; set aside.
- Place the 3/4 C. Packed Brown Sugar, 3/4 C. Stevia Brown Sugar Blend, 1 1/2 C. Water, and 1/2 C. Real Maple Syrup into a medium skillet over high heat. Bring it to a boil then reduce heat to low to simmer for 2 minutes.
- Once done, carefully pour over the batter in the baking dish. Do not stir.
- Place it in the oven to bake for 30-40 minutes or until golden brown and the cake is set.
- When done, remove from the oven and allow to cool slightly before dividing evenly among bowls to enjoy with whipped cream, ice cream, or whatever else!
