If you're looking for a mashed potato alternative, look no further! I've made mashed cauliflower a lot of times and for many different kinds of meals. This one though, is the perfect quick and easy side dish that is sure to wow the entire family, whether as part of a busy weeknight or weekend get together.

These mashed no-tatoes are made with cauliflower instead of potatoes and are loaded up with all the goodies to make them 'fully loaded'. We're talking bacon, cheese, green onion... the works!

Since these are no-tatoes (instead of potatoes), I got my hands on NEW Land O Lakes® Soft Squeeze™ Spread! It's made with real butter and stays clean and crumb free. The New Land O Lakes® Soft Squeeze™ Spread is in an easy squeeze bottle with less mess, making it perfect for cooking buttery eggs, pancakes, or even on top of corn! The best part for me is that it's usable and spreadable straight out of the fridge.

To make these mashed no-tatoes, you start out by steaming the cauliflower in the microwave for a quick and hands-free way to get it nice and tender. Then you mash the cauliflower with some bacon, cheese, green onion and milk to get the 'fully loaded' in there. After that, it's all piled into an oven safe dish where more cheese is melted on top before serving with more bacon and green onions to garnish.

If you like mashed potatoes, you're going to love these no-tatoes just as much - if not even more! I served mine with another side of broccoli and some grilled chicken breast for a simple and perfect dinner.

Loaded Wedge Salad Loaded Cauliflower Mashed No-Tatoes

These loaded mashed no-tatoes are steamed tender cauliflower mash that's full of bacon, cheese, and green onions! A perfect quick and easy side dish that the whole family will love.

Prep Time: 5 Minutes • Cook time: 15 Minutes

The Skinny:
Servings: 6 • Serving Size: 1/2 - 3/4 Cup • Calories: 144 • Fat: 9 g • Saturated Fat: 3 g • Carb: 11 g • Fiber: 4 g • Protein: 7 g • Sugar: 5 g • Sodium: 203 mg

Ingredients:
• 2 Medium Heads of Cauliflower
• 1/4 C. Water
• 1/4 C. Reduced Fat Milk
• 1/2 C. Reduced Fat Shredded Sharp Cheddar
• 1/4 C. Chopped Green Onions
• 4 Slices Low Sodium Center Cut Bacon
• 1 Tbsp. NEW Land O Lakes® Soft Squeeze™ Spread
• Salt & Pepper to Taste

Directions:
Place the cauliflower  and 1/4 C. water into a large microwave safe bowl (preferably one with a 'steam' lid).

Season the cauliflower with some salt and pepper to taste and cover slightly.

Place the bowl in the microwave and cook 6-8 minutes or until tender.

NOTE: I cooked mine in 2 minute increments, stirring the cauliflower in between.

Preheat the oven to broil.

Once the cauliflower is good and tender, add in 1/4 C. milk, 1/4 C. shredded cheddar, and 2 Tbsp. green onions. Use a hand mixer or the bowl of a stand mixer with the whisk attachment to beat the cauliflower into a mash.

Stir in about half of the bacon crumbles.

Use the 1 Tbsp. of 1 Tbsp. NEW Land O Lakes® Soft Squeeze™ Spread to grease a large oven safe dish.

Transfer the cauliflower mash into prepared oven safe dish and top with the remaining 1/4 C. shredded cheddar.

Place the dish under the broiler for just a couple of minutes; just long enough to melt the cheese on top.

Once the cheese has melted, remove the dish from the oven and top with the remaining 2 Tbsp. of green onion and bacon crumbles.

Serve right away and enjoy!
