While I was putting together my weekly meal plan this weekend, I was racking my brain to come up with some fun lunch ideas for my little girl. Somewhere along the way I realized that she has never had the 'joy' of trying a Lunchable.
A few other things that she's never had? Spaghetti O's... McDonald's anything... or a frozen meal (such as Kid Cuisine.)
So, I decided that I would make her a home version of a Lunchable to take for lunch this week at school. And in the process... I realized I wanted to be a kid again this week too!
Okay, a kid... but perhaps a little more adult about it.
This is what I came up with for my Grown Up 'Lunchable.
While it may not look like much. I promise it's pretty filling by the end of it!
I used Waterthin Crackers, which were found in my grocery store near the deli with pita breads and wraps. I chose them because they are light, thin, crispy... and only 70 calories for 10 of them! I also went with a reduced fat sharp white cheddar and some turkey salami in stead of the traditional ham and american cheese. Oh, and for the chocolate? One of my favorites! A Chuao Firecracker Bar made with dark chocolate, pop rocks, and chipotle.
This lunch is of course super easy to pack up and take off to work or for a picnic with a mini bottle of wine maybe?
The only thing I might do differently would be to add some fresh or dried fruits!

1/4 (98 Calories) Dark Chocolate Bar (I used a Chuao Firecracker Bar.)
Directions:
Plate it all together or pack up to go and enjoy!
