Despite the trying times, the word is still turning and life continues. What does that mean? I’m in the thick of it being pretty much everyone in my direct families birthday time. There’s about a three month segment of time in the summer that houses somewhere about 9 birthdays. This week? It’s not only my dad’s, and mine, it’s also Father’s Day! And that’s not to mention the next week!
Even with a touch-and-go grocery shopping situation, I was still able to come up with this bad ass cake. Since it also happens to be ‘Area 51’ week for my kiddo in out ‘fun weeks of summer’, I decided to make this out-of-this-word Galaxy Roll Cake.
The cake here is pretty simple. A vanilla cake base that’s colored with black, blue, teal, and green and then swirled together before baking. Once that’s done, it’s rolled up with a whipped cream cheese frosting. Finally, it’s topped off with a simple homemade chocolate ganache that’s made a little darker with the help of black food coloring again.
I’ll admit, I was a little fearful of black food coloring but I used very little and in the end I was really happy that I used it. The color added so much depth to the ganache! Over the top of everything I used a special ‘outer space’ sprinkle mix.

Cake:
• 1 C. Flour
• 1 Tsp. Baking Powder
• 1/2 Tsp. Salt
• 4 Eggs, Room Temperature
• 1/2 C. Natural Sweetener
• 1/4 C. Sugar
• 2 Tbsp. Vegetable Oil
• 2 Tbsp. Unsweetened Almond Milk
• 1 Tsp. Vinegar
• 1 Tsp. Vanilla Extract
• Food Coloring: Purple, Blue, Teal, & Black
Filling:
• 4 Oz. Neufchâtel Cream Cheese
• 1 C. Powdered Sugar Substitute
• 2 C. Sugar Free Cool Whip
Chocolate Ganache:
• 1/2 C. Heavy Cream
• 1 C. Semi-Sweet Chocolate Chips
• Food Coloring: Black
Directions:
Preheat the oven to 350 degrees F. and line a large baking sheet with parchment paper; set aside.
Whisk together the 1 C. flour, 1 Tsp. baking powder, and 1/2 Tsp. salt in a medium bowl.
In the base of a stand mixer, beat together the 4 eggs for about 3 minutes on a high speed, or until a pale yellow color.
Slowly add in the 1/2 C. natural sweetener and 1/4 C. sugar while still beating.
Add in the 2 Tbsp. oil, 2 Tbsp. milk, 1 Tsp. vinegar, and 1 Tsp. vanilla and beat lightly.
Fold the flour mixture into the egg mixture until just combined.
Divide the batter evenly among 4 bowls and color accordingly.
Pour each of the bowls of batter out onto the prepared baking sheet and swirl the colors together.
Place in the oven to bake for about 15 minutes or until the edges are starting to brown and the cake springs back when touched.
Set out a tea towel and dust with powdered sugar.
Turn the cake out onto the prepared tea towel and roll it up! Set aside to cool completely on a wire rack.
While the cake is cooling, beat together the 4 Oz. cream cheese, and 1 C. powdered sugar substitute.
Fold the 2 C. cool whip into the cream cheese mixture and stir well to combine.
Once the cake is cool, carefully unroll it and spread the cream cheese frosting over it; leaving about 1/2” on either edge.
Roll it back up and place in the fridge to chill.
While the cake is chilling in the fridge, heat up 1/2 C. heavy cream and pour it over the 1 C. chocolate.
Allow it to sit for a couple of minutes before adding in a few drops of black food coloring. Stir to combine and get the chocolate good and melted!
Allow the chocolate to cool to about room temperature before removing the cake from the fridge and coating with the ganache.
Add sprinkles as desired and place in the fridge again to continue to chill and set the ganache.
Once firmed up, cut into 10 pieces and serve to enjoy!
