I used mine on a salad with baby spring mix, goat cheese, dried cranberries, and mandarin oranges for a make-ahead meal for lunches this week.
Cranberry Orange Vinaigrette
Ingredients
- 1 C. Fresh Cranberries
- 1/4 C. Honey
- 1/4 C. Apple Cider Vinegar
- 1/2 C. Orange Juice
- 1/4 C. Extra Virgin Olive Oil
- 1 Tbsp. Dijon
- 1/2 Tsp. Salt
Instructions
- Place the 1 C. Fresh Cranberries, 1/4 C. Honey, and 1/4 C. Apple Cider Vinegar into a small sauce pot and bring to a simmer over medium heat for 5-7 minutes, or until the cranberries are softened.
- Once done, remove from the heat and place into a blender, food processor, or the cup of an immersion blender.
- Add in the 1/2 C. Orange Juice, 1/4 C. Extra Virgin Olive Oil, 1 Tbsp. Dijon, and 1/2 Tsp. Salt.
- Puree down into a smooth dressing.
- Place into a sealed container and chill in the fridge for about an hour.
- Once cold, enjoy right away on your favorite salad or keep in an air-tight container in the fridge until ready to use.
