My little girl is a huge Chex™ fan, and is also my big-little helper in the kitchen. I like to find fun and simple recipes that she can easily help me with, if not just do on her own. So, I decided that we should start a new tradition to “Mix up the Holiday Magic” with allowing her to pick out her favorite Chex cereal and we use it up in a recipe together.
This year we decided to go with the Cinnamon Chex cereal. I was able to find the perfect Chex Party Mix to make with it.
Seriously, this mix is delicious and couldn't be more easy to whip up. I was really glad that I decided to go with a sweet treat this time around instead of the savory ones that I've come to know, love, and almost expect. This cranberry-orange mix was a delightful change of pace. Plus, I loved that it was something I could let my little one help me with.
Funny enough, this mix reminded me a lot of a cookie that my mom used to make around the holidays that was full of cranberries and had a wonderful orange glaze on top. Yum! It was a fond memory that I enjoyed sharing with my daughter and remising over with my mother.
The orange juice and the brown sugar in this recipe work together to create this sort of crunchy, orangey caramel coating over the cereal that is amazing along with the tangy cranberries and the walnuts too.
This is definitely one of my new favorite holiday traditions! It was so nice to have this snack hanging around for friends and family to taste as they come and go through this busy season.
Somehow all of it was gobbled up this weekend, so I guess that I'll have to make some more here soon since none was leftover. Not that I can say that I can blame anyone. This stuff is amazing. The only thing that I might try different next time is with swapping the walnuts for pecans, but that's just because I'm a Texas girl.

Cranberry-Nut Cinnamon Chex™ Mix

The Skinny:
Servings: 16 • Size: About 1/2 Cup • Calories: 190 • Fat: 7 g • Carb: 30 g • Fiber: 0 g • Protein: 2 g • Sugar: 12 g • Sodium: 95 mg
Ingredients:
6 C. Cinnamon Chex™ Cereal
1 C. Walnut Halves
1/4 C. Packed Brown Sugar
1/4 C. Frozen Orange Juice Concentrate
2 Tbsp. Vegetable Oil
1/2 C. Dried Cranberries
Directions:
In large microwavable bowl, mix cereal and walnuts; set aside.
In a small 2-cup microwavable bowl, microwave brown sugar, orange juice concentrate and oil (or light margarine) on high for 1 minute; stir. Microwave about 1 minute longer, stirring after 30 seconds, until mixture is hot.
Pour over cereal mixture, stirring until evenly coated.
Microwave uncovered on high 5 for minutes, stirring every 2 minutes.; stir in cranberries.
Spread on waxed paper or foil to cool.
Once cooled, store in tightly covered container.
