So… I’ve been missing for 3 days now. I live in Texas and in case you didn’t hear the news, the entire state was basically without power for the most of this past week - during some of the coldest weather we’ve had in decades. It wasn’t fun. On top of being without power, we were also put on a ‘boil water’ notice. Anyone know how to boil water when you don’t have power? It’s tricky.
Thankfully, my home got it’s power back yesterday morning. And we’re (so far) one of the few houses to have both heat AND running water for the time being. I’m still being cautious with how much electricity being used as we try and keep the grid stable, but as soon as the lights and heat came on, I was ready to get baking. Nothing much is more comforting than chocolate. And these Healthified Cosmic Brownies are chocolate on top of chocolate and rainbow bits!
These Healthified Cosmic Brownies are a healthier take on the childhood favorite. Dense, rich, fudgy brownies that are topped off with a chocolate ganache and then ‘rainbow chip candies’. I honestly didn’t even know you could by the rainbow chip candies in the store, but I was super stoked to find out that you could.
If these pretty little brownies don’t put a smile on your face and send you down memory lane, then I just don’t know what will. I lightened these up with using sweetener in place of the most of the sugar, but other than that these are fairly true to the original.
Healthified Cosmic Brownies
Ingredients
- 3/4 C. Butter, Softened
- 3/4 C. Unsweetened Cocoa Powder
- 1/2 C. Sugar
- 1/2 C. Natural Sweetener
- 1/2 C. Stevia/Brown Sugar Blend
- 2 Whole Large Eggs
- 2 Tsp. Vanilla Extract
- 1 1/4 C. Flour
- 1 Tsp. Corn Starch
- 1/2 Tsp. Salt
- 1 1/2 C. Semi-Sweet Chocolate Chips
- 1/2 C. Heavy Cream
- 1/3 C. Rainbow Chip Candies
Instructions
- Preheat the oven to 350 degrees F. and lightly coat a 9x13" baking pan with baking spray; set aside.
- In a medium bowl, whisk together the 3/4 C. butter and 3/4 C. cocoa powder until smooth.
- Beat in the 1/2 C. sugar, 1/2 C. sweetener, and 1/2 C. brown sugar sweetener blend, 2 eggs, and 2 Tsp. vanilla until smooth.
- In a separate bowl. sift together the 1 1/4 C. flour, 1 Tsp. corn starch and 1/2 Tsp. salt.
- Stir into the wet mixture until just combined.
- Spread the batter into the prepared pan and bake for 16-18 minutes.
- Once done, remove from the oven and cool completely.
- While the brownies are cooling, place the 1 C. semi-sweet chocolate chips, 1/2 C. milk chocolate chips, and 1/2 C. cream into a bowl and microwave for 1 minute.
- Let sit for 2 minutes before stirring until smooth.
- Spread the ganache over the brownies and sprinkle with the 1/3 C. rainbow chips while ganache is still wet.
- Allow to cool and set before cutting into 24 squares to enjoy!
