That's why I love to be readily prepared with simple and easy recipes that are versatile in the sense that they could be used as an appetizer or made into a light meal.
These Baked Mexican Meatballs are not only more wholesome, being made with a lean ground turkey, but are also full of flavor. They are perfectly popable, dipable, and dunkable as a one bite appetizer or can be used creatively to incorporate into a meal!
I made these meatballs using a lean ground turkey, and just a handful of spices (which you likely already have in your pantry), and a few fresh produce staples like green onions and cilantro.

Baked Mexican Meatballs

The Skinny:

Ingredients:
1 Lb. Lean Ground Turkey
1/4 C. Whole Wheat Bread Crumbs
1/4 C. Fresh Cilantro, Chopped
1/4 C. Green Onions, Chopped
2 Tbsp. Salsa
2 Tsp. Reduced Sodium Taco Seasoning or Homemade
Salt & Pepper to Taste
Optional Dips: SIMPLY AVOCADO™, Salsa, Queso, etc.
Directions:
Preheat the oven to 400 degrees F and line a baking sheet with parchment paper or a silicone mat for easy cleanup; set aside.
In a large bowl add all the meatball ingredients and mix well (using clean hands or the bowl of stand mixer with the paddle attachment.)
Shape the meat mixture into balls around the size of a golf ball.
Place the meatballs on the prepared baking sheet and bake for 30 minutes until golden brown.
Once done, remove from the oven and enjoy right away!
I served mine with SIMPLY AVOCADO™ for a delicious dunkable bite.
