Look. I don’t know. I have a problem with queso. It’s just the perfect and most ultimate food in my personal opinion. And this Bacon Queso Baked Pumpkin is Fall perfection. It’s as easy as taking a small pumpkin, hollowing it out, and backing your queso inside it for a fun and festive way to get your queso on.
And… everything in moderation, right? This Bacon Queso Baked Pumpkin is the most amazing way to save queso in the Fall season. It’s visually appealing, and I mean… how do you even go wrong with queso anyway? If it’s wrong, I don’t want to be right.
This queso is kicked up a it with some chipotle in adobo, but don’t worry it’s not too hot. It’s just the right about of spice that balances out with the little bi of pumpkin that comes along with the baking inside the pumpkin.
I topped mine off with just a little bit of fresh pico de gallo and served it with some mini chipotle tacos, but this would be just as amazing served with chips and salsa or even some guacamole.
Bacon Queso Baked Pumpkin
Ingredients
- 2-3 Lb. Pie Pumpkin, Cleaned Out
- 2 C. Shredded Reduced Fat Cheddar
- 10 Oz. Diced Tomatoes & Green Chiles (Rotel)
- 8 Oz. Bacon, Cooked & Crumbled
- 8 Oz. Velveeta
- 1 Tbsp. Chipotle in Adobo
Instructions
- Preheat the oven to 350 degrees F.
- Mix the 2 C. cheddar, 10 Oz. rotel, 8 Oz. bacon, 8 Oz, Velveeta, and 1 Tbsp. chipotle in adobo together and stuff it into the hollowed out pumpkin.
- Cover the top loosely with foil and place the pumpkin into a baking dish to catch any drippings.
- Place the pumpkin in the oven to bake for 50 minutes.
- Remove to stir the cheesy contents then place back into the oven without the foil for 20 more minutes.
- Once done, remove from the oven to enjoy!
