You can serve these stuffed avocados as-is or with salsa, queso, or any other Tex-Mex style sauce you might desire. There really isn’t a whole lot here that you can do to ‘lighten’ this dish up. I did use boneless skinless chicken breast and loaded it up with green onion, fresh herbs, and some cheesy goodness.
The bigger the avocados, the better. This does make some BIG beefy stuffed avocados that are just as filling as they are delicious!
Air Fryer Stuffed Avocado
Ingredients
- 1 Boneless Skinless Chicken Breast, Cooked & Shredded
- 2 Green Onions, Chopped
- 2 Tbsp. Chopped Fresh Cilantro
- 1/2 C. Shredded Monterrey Jack Cheese
- 1 (4 Oz.) Can Diced Green Chiles
- 2 Avocados
- 1 C. Panko
- 1 Tsp. Taco Seasoning
Instructions
- Stir together the 1 Boneless Skinless Chicken Breast, 1/2 C. Shredded Monterrey Jack Cheese, 1 (4 Oz.) Can Diced Green Chiles, 2 Green Onions, 2 Tbsp. Chopped Fresh Cilantro, and Salt & Pepper to taste.
- Cut the 2 Avocados in half and remove the pit.
- If the pit is rather small, remove some of the middle of the avocado to make enough room to stuff with the chicken mixture.
- Divide the chicken mixture evenly among the avocado halves.
- In a small bowl, stir together the 1 C. Panko and 1 Tsp. Taco Seasoning.
- Gently press the avocado halves back together and roll the avocado through the panko mixture to coat evenly.
- Give them a light spritz of non-stick cooking spray and place the avocados in the air fryer.
- Cook at 400 degrees F. for 5 minutes.
- Flip and then continue to cook for another 5 minutes or until browned.
- Once done, remove from the air fryer and enjoy right away.
