Oh, kale no…
These kale chips couldn’t be more simple or easy to make. They’re really one of my all time favorite snacks too. Other than being ridiculously cheap, they also end up being low calorie, vegetarian, gluten free, and keto friendly! The fun doesn’t stop there though, they’re also made with right at 5 ingredients. 5 whole simple ingredients that you probably already have on hand.
I used to be excited to see kale chips at the store, until I realized what they were charging for them. Excuse me? 8 bucks for a box of cheesy kale? No thanks! Kale started off as a bland green that was used to decorate buffets and salad bars. Now that it’s trendy, the prices have taken gotten out of control. So, I’ll make my own kale chips.
These kale chips are crispy crunchy and weigh in at only 48 calories in a serving. That’s 1/4 of a bunch of kale and cheesy goodness for 48 calories and none of the guilt. Plus, I love being able to play around with the flavors and ingredients to suit my liking. This is definitely not my first, nor my last time making crispy kale bites.
Be warned too that this kale goes quickly. It didn’t even last a whole day on my kitchen counter before it was eaten up and disappeared into the abyss. Really, I have no idea which one of them ate it all…
The good thing is that this kale will last for about 3 days in a cool dry place, which makes it great for sticky-snacking during the day to tide you over between meals.
Feel free to change up the cheese here to get different flavors of kale chips. I went with fine grated parmesan just because it tends to be my favorite to pair with kale. But, a fine fresh grated cheddar (not shredded cheese) would be pretty damn good too!
