I don’t know about anywhere else, but this week it is hot Hot HOT here in Austin, Texas. We’re talking triple digits as far as the eye can see. This means that my oven (and sometimes even my stove) are on lockdown. This means almost nothing is baked. The oven isn’t turned on for any reason.

Mango Pineapple Chamoy Popsicles

This is the last week of school here and whether we like it or not the hotter weather is coming! I’m already preparing by making these Mango Pineapple Chamoy Popsicles! I’ve made some mango chili popsicles in the past, but I wanted these to have a bit more spice and some chamoy flavor too!

Although I didn’t do it today, you could add a little something something to these to spike them too. But, for today I kept mine clean. The chunks of fresh pineapple and mango in here along with the Tajin are perfection. Plus, I love that I get to control how much heat goes into these things too…

Spinach & Strawberry Salad

Yes, I'm a huge salad fan. I love all the veggies and different ways to dress up your leafy greens with one dressing or another. Plus, there's just something refreshing about indulging in a crisp cool salad when it's upwards of 80... 90... 100 degrees. Which we’ve already gone over 80 here!

Air Fryer Chocolate Chip Cookie

Once again I find myself wanting something I’m not willing to turn the oven on for, so I decided to try my hand at making cookies in the air fryer. Can it be done? As it turns out - it totally can! But I decided I would make one BIG cookie instead of several little ones. Mostly for ease since I have a perfectly sized push pan that fits into the basket of my air fryer just barely.

This Air Fryer Chocolate Chip Cookie is super easy to make, and let me just say that it’s soooo good too. The air fryer gives it a unique texture that is gooey here and crisp there. Blueberry Waffles

I have pretty much been in love with my waffle maker ever since I got it, if you couldn’t tell. I’ve been making all sorts of waffles. Sweet ones, savory ones, some with mixes, others from scratch. I’ve got to say though that these Blueberry Waffles take the cake. They’re made all in one bowl with very real and very simple ingredients that you probably already have on hand.
