Skinny Bacon & Cheddar Irish Soda Bread

There is one thing that I absolutely MUST make every year towards the end of February and the beginning of March, and that is Soda Bread. Again, it’s a nod to my Irish roots. Irish soda bread is a yeast-free bread that is quick and super easy to make. Really, guys… it’s almost fool-proof. Almost. Trust me, I know because baking tends to scare the pants off of me.

I used my original Healthified Irish Soda Bread as a base for this Bacon & Cheddar variation. This time around I used whole wheat flour to get a more golden color at the end, and of course… loaded this bad boy up with plenty of cheese and bacon goodness…

Sometimes the family just wants something light and snacky for dinner. These French Dip Bites are perfect for being added to any game day or get-together spread. They’re rather quick and easy to make… and that homemade au jus? Mmm… that may just be the best part! It’s delicious and almost fool proof.

Usually au jus can be complicated and time consuming. This one though? Easy breezy with no drippings required. Plus, being as its homemade, you get to decide how to season it! While the bites themselves are delicious the au jus is really the star of the show here…

This past week, I got my hands on some delicious ‘tipsy’ cranberry jam that is made here locally. And since I already had some egg nog bread sitting on my counter ready to go, I thought I should find some clever way to put the two together!

I’m busy. You’re busy. We’re all busy right now! The Holidays are hot on our heels and it’s a mad dash to the finish line by now. With being a bit under the weather for this past week, I’ve been doing my very best (yet still failing more than once) to feed the house. Club Sub in a Tub

So, back when I was in high school, my parents had a boat. It wasn't a big boat or an expensive boat. Just an old clunker of a boat. In fact, it ended up sinking. At the dock. ...And almost with my grandmother on it too! ...Even so, our family had a lot of great fun and adventures on that boat. Many a summer night and day were spent out there on the water, together, as a family. It's truly some of my fondest memories.

Almost anytime we'd go spend the day out on the boat, we'd stop by this old gas station along the way to fuel up good ole' Titanic and grab some sub sandwiches. I almost always got the same thing, a simple club sub sandwich.

Several months back, my dad went out and bought another old boat; after years of not having one and living within near walking distance of a lake now.
