Just about everyone enjoys a good burger. Especially during the summertime when grilling season is in full swing! I don't know about you, but I always like to play around with burger flavors. I guess that started some years back now when I was in high school and my parents started buying these 'fully loaded' burgers from a local grocery chain. They were always delicious but super expensive! I knew even then how easy they would be to make ourselves at home, and how much cheaper and better they would be too!
Now, I'll be honest in saying that, originally, I was just going to shoot for a spinach and artichoke burger. But I figured, why stop there? We're going way outside the box here! So, I ended up making these Spinach & Artichoke Mediterranean Burgers which really couldn't be any more fully loaded.
I was sure to pack these patties full of flavor. Spinach, feta, chopped Reese Artichoke Hearts, Reese Capers, seasoning, and of course... a touch of Reese Prepared Horseradish for a real flavor packed punch. You've really got to try Reese Artichokes, Hearts of Palm, Capers and Horseradish! I've had their capers before, and I'm well known for eating Reese Artichokes all on their own.

• 1 Lb. Extra Lean Ground Beef
• 1 C. Chopped Fresh Baby Spinach
• 1/3 C. Reese Quartered Artichoke Hearts, Chopped
• 1/4 C. Feta Cheese Crumbles
• 2 Tbsp. Whole Wheat Bread Crumbs
• 2 Tbsp. Greek Dressing
• 1 Whole Large Egg (Or 2 Egg Whites)
• 1 Tbsp. Reese Capers
• 1 Garlic, Minced
• 1 Tsp. Salt-Free Garlic & Herb Seasoning
• 5 Large Lettuce Leaves
• Optional Toppings: Pickled Red Onions, Mayonnaise, and Reese Prepared Horseradish
Directions:
In a large bowl, mix together the 1 Lb. ground beef, 1 C. spinach, 1/3 C. chopped artichoke hearts, 1/4 C. feta, 2 Tbsp. feta, 2 Tbsp. whole wheat bread crumbs, 2 Tbsp. Greek dressing, 1 whole large egg, 1 Tbsp. capers, 1 garlic clove, and 1 tsp. salt-free garlic & herb seasoning. Mix well to combine. Divide the mixture up evenly into 5 patties. Preheat the grill. Every grill is different, so you will want to heat yours accordingly for cooking burgers. NOTE: I used my indoor grill since it was so hot out today and set it to medium-high heat. Transfer the patties to the grill and cook accordingly until reaching an internal temperature of at least 160 degrees F. NOTE: Mine took about 5-7 minutes on my indoor grill and didn't require flipping since the indoor grill cooks both sides at the same time! Once done, remove the burgers from the grill and top with desired condiments. I went with some quick pickled red onions and some horseradish! Wrap the burgers up in a large lettuce leave and enjoy right away.
