This past week, I got my hands on some delicious ‘tipsy’ cranberry jam that is made here locally. And since I already had some egg nog bread sitting on my counter ready to go, I thought I should find some clever way to put the two together!
While this sandwich isn’t exactly conventional, it takes a page out of that ‘mcgriddle’ play book. Putting the two powerhouses of sweet and savory into each and every bite. The sweet being the egg nog bread and the jam and the savory being the bacon and the egg with cheese.
I kept this sandwich as light as I could by using my own homemade bread and a low sodium center cut bacon. Though… that’s really the only two things that you could change up about a breakfast sandwich. If you’re really trying to behave, you could use a reduced fat cheese and egg whites instead of a whole egg.
Either way you go about it, this breakfast sandwich is delicious and well worth making your own bread for! The egg nog bread is really what makes this sandwich sing. Plus, it’s a great way to use up that bread in a more creative way than just butter and jam. Though I wouldn’t complain about that either!
Honestly, even though I used my own homemade bread here, you could really use any sweet sort of ‘holiday’ inspired bread that you enjoy. And if you don’t like your eggs scrambled, try one soft boiled or even cooked however you like!

• 1 Whole Large Egg
• 2 Slices Eggnog Bread
• 1 Tbsp. Cranberry Jam
• 1 Slice Havarti Cheese
• 2 Slices Low Sodium Center Cut Bacon, Cooked
• Salt & Pepper to Taste
Directions:
Heat a small skillet over medium high heat and cook the egg to scramble; season with salt and pepper to taste.
While the egg is cooking, toast the slices of eggnog bread and spread each slice with the 1 Tbsp. of cranberry jam.
With the egg cooked and still hot, place it onto the prepared slices of bread and top with the cheese to allow it to melt.
Add the 2 slices of bacon on top and close that sandwich up!
Cut in half and enjoy right away.
