A lightened up take on a Croque Madame, made with turkey, mornay sauce, and eggs! This guilt-free twist keeps all the charm and flavor, while giving your waistline a little love.

Ingredients

Mornay Sauce
  • 1 1/2 Tbsp. Butter
  • 1 1/2 Tbsp. Flour
  • 1 C. Reduced Fat Milk
  • 8 Oz. Shredded Gruyere
  • 2 Oz. Shredded Parmesan
  • Dash of Ground Nutmeg
  • Salt & Pepper to Taste
Croque Madame
  • 6 Light English Muffins, Toasted
  • 6 Tbsp. Dijon
  • 6 Slices Turkey (I used Boar's Head Maple Turkey Breast)
  • 6 Poached or Fried Eggs

Instructions

  1. In a small pan, melt the 1 1/2 Tbsp. Butter over medium heat. Whisk in the 1 1/2 Tbsp. Flour and cook for about a minute.
  2. Slowly whisky in the 1 C. Reduced Fat Milk and bring it to a bubble.
  3. Remove from the heat and add in the 8 Oz. Shredded Gruyere, 2 Oz. Shredded Parmesan, and Dash of Ground Nutmeg. Stir until all the cheese has melted then season with the Salt & Pepper to Taste
  4. Set out the 6 Toasted Light English Muffins and spread 1 Tbsp. Dijon on the inside of the top of each.
  5. Fold the 6 Slices Turkey to be the size of the english muffins then heat in a small skillet over medium heat. Layer the heated turkey onto the bottom of each english muffin.
  6. Set the top of the english muffins upside down onto the top of the warmed turkey.
  7. Place on of the Poached or Fried Eggs on top of the Croque Madame.
  8. Top each off with the mornay sauce divided evenly.
  9. Enjoy right away with a garnish of green onions if desired!
