Italian Lunch Box

I was sort of slightly tasked with coming up with some fun and easy lunch(able) ideas recently. It seems like breakfast is pretty easy, dinner is almost always planned, it’s lunch that most people seem to have the greatest trouble with. I know that if I make up a few little lunch boxes ahead of time, that I’m a lot more likely to eat those, rather than going without or eating something I really shouldn’t.

For me, I like light lunches. Snackable lunches. Something finger-friendly that I can nom on while working at my desk. Right? Well, this Italian Lunch Box is just that! Reuben Pizza

Two things are staple dinners in this house almost every week. And that’s tacos (on Tuesdays) and pizza! Yep. That’s right. I eat pizza. A lot of it too. Not a lot as in amount, but a lot as in often. I guess that’s what happens when you have a kid. Pizza and tacos.

I can put almost anything on a pizza crust and it’ll get eaten. And with St. Patrick’s day being a family favorite holiday, I thought now would be the best time to make a reuben inspired pizza! Nordic Lunch Box

Sometimes simple is the best. This light little lunch is Nordic inspired. It’s easy-peasy with just a few clean ingredients; making it perfect for meal prepping and making ahead for the week! The original ‘boxed lunch’ that I got the inspiration for this lunch box for was made with a smoked salmon. I’m not a seafood eater though, and with St. Patrick’s day just around the corner, I thought deli sliced corned beef would be the next best option!

The fun thing about this lunch is that you can do with it as you please. Pile it all onto the crackers for one delicious mixed bite. Or keep it all separate and enjoy as a finger-food grab-and-go lunch…
