This dinner comes together really quickly, and you can even mix and put together the meatballs ahead of time to have them ready to start cooking at dinner time. 'Tortilla Trend' Omelette

There’s this trend going around right now called the ‘Tortilla Trend’ where you take a tortilla and cut it halfway through the middle and then proceed to fill each quarter segment of it with different things and then fold it over on itself to make a tasty wrap. I decided to take that idea and make into more of an omelette with some of my favorite breakfast burrito fillings.

I for one, love appetizers. I could make a meal alone out of small appetizers, both hot and cold. One of my favorites though, has to be stuffed mushrooms. My love of stuffed mushrooms goes back several years where I think my first try was at a little Italian restaurant.

Breakfast is served! This Skinny Instant Pot Breakfast Casserole is quick and easy to make with no usual overnight sitting required. Plus, it’s low carb and keto friendly. Did I mention that it’s loaded with plenty of bacon and cheese too? Yep! This casserole is definitely a new breakfast favorite.
