Cranberry-Orange Muffins

November 24, 2020 Amanda Plott
cranberry-orange-muffins17.jpg

Just in time for the holidays! These Cranberry-Orange Muffins are a delicious way to start off any morning with a bright and colorful Holiday inspired breakfast bite. Cranberry and orange are one of my all time favorite flavor combinations. The tartness and sweet playing off one another is always tasty. I’ve used the dynamic duo in bread, cookies, and now muffins!

If the Holidays could baked and served for breakfast, I’m pretty confident that they would taste just like these muffins right here. A little sweet. A little tart. And a whole lot of yum. Plus, this is about as simple as you can get with a muffin recipe…

Skinny Peanut Butter Bread

November 16, 2020 Amanda Plott
peanut-butter-bread12.jpg

Baking is the name of the game right now. It never fails, every year in the midst of Fall and Winter months I attempt to get as much use out of my oven as possible since it becomes too hot to do so through the most of the Spring and Summer months. I’ve made a lot of breads lately and I’ve got to say that this Skinny Peanut Butter Bread is one of my favorites.

This bread is perfectly sweet and full of peanut butter flavor. I found it to be a great breakfast bread, but I’m wondering too if there could be other uses by way of a PB&J sandwich…

Ever use want a piece of pie for breakfast? Now you can have it! This Apple Pie Monkey Bread is a winning combination of the flavors of apple pie and the ease of monkey bread. If you haven’t had monkey bread before, it’s basically a fun way to have a pull-apart breakfast, brunch, or dessert.

You can make it all sorts of fun ways. I’ve made everything from Pumpkin Spice to a savory Bacon, Egg & Cheese version! I decided to go with an apple pie theme this time since apple pie can be a Fall favorite, or even a year round treat. I mean, do you really need an excuse to have apple pie?…

Skinny Pumpkin Chocolate Chip Bread

October 29, 2020 Amanda Plott
pumpkin-chocolate-chip-bread4.jpg

Usually around this time of year my daughter is begging my mom to make pumpkin chocolate chip bread or muffins, but since my mom isn’t around yet this year (for the obvious reasons and the not so obvious ones) , I decided to whip up a loaf of the family favorite myself.

This Skinny Pumpkin Chocolate Chip Bread is lightened up in the best of ways without sacrificing flavor or texture. The bread is just as moist and decadent as it’s full on bad boy brethren - I promise! I only made a couple of swaps to this bread. One was subbing in some natural sweetener in place of sugar, and another was subbing out ALL of the brown sugar for a brown sugar/sweetener blend. That’s it. That’s all…

There’s nothing quite like waking to homemade cinnamon rolls. They’re truly one of my favorite breakfast items. Soft, fluffy, sweet, and once you get the hang of it - they’re fairly simple to make too! These Skinny Cranberry Cherry Cinnamon Rolls really take the cake, especially around Fall and Winter when cranberries are all the rage.

I based these sweet rolls off of my fave holiday pie, which happens to be a Cranberry Cherry Pie. The mix of cranberries and cherries is hard to beat. It’s sweet with the cherries and also has some tang to it with the natural tartness of cranberries being added…

Sweet Potato Biscuits

October 21, 2020 Amanda Plott
sweet-potato-biscuits4.jpg

Who says Fall has to be all about pumpkins anyway? Sweet potatoes deserve some love too! These Sweet Potato Biscuits are easy to make and just about as delicious as biscuits can get. They’re fluffy and light and the perfect addition to any Fall inspired meal, be it breakfast, brunch, or dinner! I topped mine with some apple butter and served them with fresh berries as breakfast, but they would be damn good with some gravy or served alongside a pot roast.

These biscuits would be super easy to make vegan too! How? Just sub in some vegan butter for the regular butter and bing-bang-boom, you’ve got vegan biscuits!…
