It’s ‘fantasy’ week here in my house as part of our themed summer weeks. And to kick thoughts off, I thought I would start us off with some Rainbow Unicorn Poptarts! These poptarts aren’t your usually run-of-the-mill poptarts. I mean, obviously… look at them!

Let’s face it, for a lot of us out there, we’re far too busy in the morning to actually sit down and eat breakfast. But! Not just any banana nut oatmeal. I wanted it to be chunky monkey style. What’s chunky monkey? Well, one of my most favorite flavors of ice cream that’s made with bananas, chocolate chunks, and walnuts.

This Breakfast BLT Bowl is one of the quickest, easiest, and most delicious breakfasts that I’ve had in a while.
