Coming in LATE today with these Burger Bowls. What is it? A burger? A bowl? The answer is YES. These are bowls made out of burger and then loaded up with all the burger goodness you know and love. Lettuce, cheese, pickles, etc. It’s all here in one beefy bowl.

Dinner is served! With my daughter being in cheerleading this year, there’s at least one day a week where we are rushing out the door between picking up from school, changing, and getting back up to the school. Tex-Mex Cheese Zucchini Enchiladas

I was really wanting some enchiladas this week. and not just any enchiladas. I wanted the traditional Tex-Mex cheese and chili version. I also really wanted to up my vegetable game, so I opted to make these enchiladas NAKED. That’s right, these enchiladas are stripped of their tortillas and instead are made with the use of zucchinis.

Zucchini Cheeseburger Skillet

Craving for something easy and cheesy? Look no further! This Zucchini Cheeseburger Skillet is easy to make, all in one skillet, and has all the cheesy goodness of a cheeseburger without any of the guilt. I based it off the same idea as my Zucchini Taco Skillet, but used cheeseburger components instead of taco. The end result was this burger in a bowl.

I made sure to load this skillet up with plenty of veggies, zucchini, onion, lettuce, and even some fresh tomato! Like I said, this has everything you love about a cheeseburger, even pickles! I’ll be real honest, it’s been a pretty rough week for me. My mom had surgery and I’ve been down and out with almost a full week of some sort of strange migraine or headache of some sort.
