Spring is upon us here in Austin Texas, which for me means entertaining friends and family... and also means it's time for deviled eggs. Not just any deviled eggs though, we're talking fully loaded in a way that I never really thought of before. These Bacon & Cheddar 'Fully Loaded' Deviled Eggs are perfectly simple to make and YES... are as fully loaded as they can come; with bacon, greek yogurt, green onions and even their fair share of cheddar!

Deviled eggs are a go-to appetizer or snack for me anytime I'm playing hostess. Why? The reasoning is simple, just as simple as they are to make! The ease of making deviled eggs is what puts them at the top of my list; boil eggs, mix, fill and chill! That's all there is to it. Mediterranean Chickpea Salad

With the schedule around my house changing up a bit recently, I've had to make some adjustments to when and how I cook. So, I've been cooking a lot less and mostly just for myself since my little one is still a rather picky eater and lately dinner time is our mommy-daughter time.

That being said, dinner time for me has included quicker, easier dishes that are either meal prepped or a one and done toss together sort of salad. Baked Beet Chips

Last week I had some beets leftover that needed to be used and decided to use them up in one of my favorite ways - as chips! Beets are really the perfect root vegetable to make chips with. They turn out crisp and crunchy while not having a completely overwhelming flavor. In fact, if you closed your eyes and ate one, you might not even know it was a beet at all!

Roasted Beet Hummus

There isn't much that's prettier than this hummus right here. I mean... look at it. It's perfectly gorgeous. Roasted beets make for the beautiful fuschia pink hue in this hummus that is sure stand out any time of year but especially around Valentine's Day.

Hummus is super easy to make, and it will save you a ton of money to make yourself too! Plus, you have complete control over what goes into it. And let's face it... It's just fun to eat pretty stuff. You eat with your eyes first...

Skinny Buffalo Chicken Spring Rolls

Can you believe that it's been almost 5 years since I started The Skinny Fork? How exciting! 5 years can make such a big difference. I look back at old recipes when I make them again and often end up retaking the photos. With these Skinny Buffalo Chicken Spring Rolls being one of my favorites, I thought I would go back and blow the dust off and give it a bit of a facelift. As usual, the recipe is the same, though I did add pressure cooker instructions! Here's the original as written!

Low-Carb Chicken 'Nachos' (Keto-Friendly)

With the Big Game coming up tomorrow I thought I needed to get another good game day recipe out. These Low-Carb Chicken 'Nachos' have been something that I've been working on for a month or two now, trying to get the spice level right and the cooking method down perfectly.

These Chicken 'Nachos' are really more of Chicken 'Not-Chos' since there is no chip involved here. Instead, the entire nacho is based on the pieces of chicken themselves. To pack in as much flavor as possible, I started these off with seasoning. A LOT of seasoning too. Let's face it, chicken breast can be a little moot. So, I wanted to be sure it had all the help that it could get here...
