I know that I’ve made mini cheesecakes in the instant pot before, but I still have some strawberry powder and strawberry cheesecake crumbs that I need to use up and for whatever ever reason it just seemed fitting to put them together in these Instant Pot Strawberry Shortcake Cheesecake Bites.

The way I was able to pack so much strawberry flavor into these cheesecakes was to use a strawberry powder. It’s basically freeze dried strawberries that have been ground down to a fine powder. Air Fryer S'mores

It’s true. You don’t need a campfire to make a s’more! You can make a s’more in the comfort of your home with the same basic ingredients and an air fryer. One of the best parts is that you can have several of them done at the same time with no fussing around with sticks! Being as s’mores only require a whopping three ingredients, there isn’t much to make better-for-you here outside of the chocolate and graham crackers.

Strawberry Shortcake Waffles

I’ve made strawberry waffles before, but I was in a bit of a rush today so I thought instead of making them from scratch, I’d save some time with a box mix. Also, there’s a trick to packing as much strawberry goodness into baked goods as possible without adding moisture and that’s by way of powder!

I added plenty of dried strawberry powder to my favorite protein packed waffle mix along with some vanilla to doctor it up as well. Apricot Chickpea Salad

So, I’ll be honest here in saying that I never really buy or use apricots a whole lot, and I’m not entirely sure why either. They taste good, fresh or dried so it’s not that I don’t like them. I just never really think to use them. But, this salad dressing just sounded really good to me for son reason or another. It’s sweet, but tangy, and yet has just a little bit of a kick from the ginger in there. It’s really one of my new favorite things on the planet.

This salad is a really good mix of textures and tastes. You really won’t miss meat here. And you won’t miss the dairy either. Somehow everything else going on really keeps you from focusing on what’s not there so that you instead focus on what is there. And that’s a lot of goodness!…

Chunky Monkey Waffles

We all know that fun flavor of ice cream ‘chunk monkey’. It’s been one of my favorite of Ben & Jerry’s ever since I knew of it’s existence.
