With the holidays hot on my heels, I’m keeping it simple this week when it comes to meals. Well… you know, outside of the big main meal that’s coming up that is. This Tomato & Feta Cheese Spaghetti is just about easy as it comes. Just toss some tomatoes and feta into dish and bake it for a bit with some oil and seasoning. Then toss with pasta and tada! Dinner.
This stuff is good too. AND it’s super easy to double up on if you have a larger crowd to feed. Plus, I love the fact that this spaghetti dinner is vegetarian too. It’s a meatless meal that everyone can enjoy!
With so few ingredients, there isn’t much you can do here to lighten the dish up other than use wheat noodles and a reduced fat feta cheese. I served this spaghetti as is and with nothing on the side. But, if you wanted to, this dinner would be great paired with a simple side Italian salad or a homemade breadstick.
I topped mine off with some fresh basil and just al little bit of shredded parmesan!
Tomato & Feta Cheese Spaghetti
Ingredients
- 8 Oz. Whole Wheat Spaghetti Noodles, Cooked & Drained
- 1 Pint Mixed Cherry Tomatoes
- 4 Oz. Reduced Fat Feta Cheese
- 2 Tsp. Minced Garlic
- 1 Tsp. Extra Virgin Olive Oil
- 1 Tsp. Italian Seasoning
- Salt & Pepper to Taste
Instructions
- Preheat the oven to 350 degrees F.
- Place the pint of cherry tomatoes, 4 Oz. feta cheese, 2 Tsp. garlic, 1 Tsp. olive oil, and 1 Tsp. seasoning into the bottom of an 8x8" or 9x9" baking dish.
- Toss or stir everything around to coat evenly.
- Put the dish in the oven to bake for 20 minutes.
- Stir to mix together.
- Add in the 8 Oz. cooked pasta and stir to coat evenly in the feta-tomato sauce.
- Season with salt & pepper to taste and serve!
