Spinach & Gouda Sprouted Wheat Strata

The first time I had a strata was some years back at a local tea house we have here. It was DELICIOUS. My mind was completely blown. So what is a strata? Well, it’s basically sort of a savory version of a french toast casserole. Bread, eggs, cheese, some veg, all baked to perfection.

I would say it’s sort of a cross between french toast and a quiche really.

I was scared for a good long while to make it on my own. Like I’ve said before, baking tends to intimidate me sometimes. The only way to get over fear is to take it head on, right? Right! So when I started this strata, I wanted to be sure to use a GOOD ‘healthy’ bread and plenty of veggies. Spinach is one of my favorites…

Spinach & Ricotta Pasta Bake

Dinner is SERVED. This Spinach & Ricotta Pasta Bake is super simple to make, it’s meatless vegetarian, and it only has a few ingredients. It starts off with a whole wheat pasta. I used some odds and ends of small pasta that I had on hand; some elbow and some shells that I put together to make a full 10 ounces of noodle. Of course, it’s lightened up with reduced fat cheeses, both with the mozzarella and with the ricotta which goes along with a full 16 ounces of spinach!

I did decide to use a jarred pasta sauce to keep it extra simple. But if I had any leftover sauce stored in the freezer, I would have used that instead. So feel free to use your favorite tomato based spaghetti sauce or marinara here. And you’ll want to reach each part individually so that you really get the flavor through it all that you want…

Strawberry Crunch Monkey Bread

So you know those strawberry shortcake ice creams with the crumbly bits of strawberry crunch on the outside? So I may have come across the crumbs, and yes, you can actually buy them! Now what does one do with strawberry crunch crumbs? Well, obviously make some sort of tasty strawberry sweet! That’s when the idea for this Strawberry Crunch Monkey Bread came to be.

Take it as a breakfast, brunch, or even dessert. This nostalgic twist on monkey bread has to be one of my new favorites. It’s ridiculously easy to make too, just as most monkey breads are. Now, there really wasn’t a whole lot to do in the ways of making this lightened up. But, I did sub out some of the sugars for natural sweeteners…
