'Nut & Seed' Grain-Free Pumpkin Spice Granola

It's been a hot minute since I made up a batch of homemade granola, mostly because it's just been way too hot here to even think about turning the oven on. But, sometimes... it's just worth it. And this morning? It was just that - totally worth it! With pumpkin spice season on the horizon, I thought there was no better time than now to tempt the cooler weather in with another pumpkin inspired treat!

I based this grain-free granola off of one that I made a while back. The main differences would be the spice used in it and the seeds that I chose to include. Since we're going with the Fall theme, I decided to use pumpkin seeds. Two kinds of pumpkin seeds, that is. I picked up a raw one to roast with the granola, and a lightly salted roasted seed called 'snow white' pumpkin seeds to add in at the end…

Strawberry Grain-Free Granola (Gluten-Free too!)

Holy. Moly. We are well into the 90 degree days here in Austin Texas and summer is nipping at our heels. The house is stifling in the days, and even while the mornings are still decently cool, I am over here preparing for the onslaught that is about to befall us with raging 100 degree + days.

As the weather turns warmer, I'm starting to lean towards the cooler and more refreshing bites for breakfast. Cereals. Yogurts. Fruits. My only problem is that all the good granolas out there cost a pretty penny. That's why I've been opting to make my own. Plus, I love being able to make my own unique flavors and there is nothing more Summery to me than strawberries. Mornings. Am I right? Even though I consider myself a morning person, they are still taxing on everyone. Even me. As I was sipping on my coffee this morning while waiting for my daughter to finish getting her shoes, she asked me if I was going to eat breakfast. She couldn't understand why I hadn't eaten already and how I wasn't hungry.

Such is the way of a mom. Of course, I was hungry! But there's just no time until after I get her off to school. Once the mad dash getting her off to class is over, that's when I get to finally eat. It's winter right now and there's a plethora of fresh winter citrus going around. Right now is one of the few times of year that you'll find blood oranges out and about.

It's no secret that I make the same loose resolution every year. To eat better. That's right, even I strive to eat better. That doesn't mean to lose weight or pick up some junky fad diet. No, no.
