Tater Tot Pizza Casserole

Tater Tot Pizza Casserole is a truly magnificent creation that effortlessly combines the flavors of two guilty pleasures in a very guilt free way. Pizza. And tater tots. It’s a kid friendly dish that adults are going to love as well. It’s lightened up by using a lean ground turkey meat in place of any sausage or standard ground beef. I also chose to add some turkey pepperoni to mine because they taste just as good as regular pepperoni but save some calories.

One of my favorite things about this casserole is that it’s super quick and easy to toss together, and could really be made ahead of time and just not baked until you’re ready for dinner. Of course, if you wanted to you could go with really any meat you wanted to here - Italian sausage, beef, turkey, etc. But, I was keeping it extra light this time!…

Despite the trying times, the word is still turning and life continues. What does that mean? I’m in the thick of it being pretty much everyone in my direct families birthday time. Kid-Friendly Chocolate Cut-Out Cookies

And just like that, this is the last post of not only the this year, but of this decade!

I decided that with this being the last one of the decade, I thought I would take it a step further and make this recipe even more special by including my little mini-me in on it. I mean… she has two and a half weeks off from school and I need to entertain her somehow, so I put her to work making cookies and writing about it.

So, we sat down and planned out what exactly we’d make. She happened to a book on ‘kids cookies’ a few months back and so that’s where we started. Within the book there’s a recipe for some chocolate cut-out cookies, and that was our inspiration for today! It’s summer and my girl and are in the thick of our first themed week! Kids cooking/baking. We’re having a LOT of fun in the kitchen to start the summer off with a bang.
