This certainly isn’t the first time that I’ve stripped my enchiladas down into their pure and naked forms. The last time I stuck with a veggie and cheese enchilada, but this time I wanted to make one that was more Tex-Mex inspired with a bunch of cheese and ground beef to pair with the staple red enchilada sauce.

Trust me when I say that you won’t miss the tortilla in these enchiladas. They are every bit as tasty and full of Tex-Mex flavor as any other enchilada you’ll come across. Sometimes, you just feel like having snacks and appetizer style things for dinner. Or maybe that's just me and my family? This weekend has been a rainy one, and I'm not about to complain about that. We've been needing the rain and the cool off from the blaring Texas sun. Even so! With being stuck indoors and games and movies being the fun of the weekend, I thought it would be perfect for an appetizer night.

For whatever reason, rain always leaves me craving Mexican food. Namely enchiladas. That's why I went with this Skinny Green Chile Chicken Enchilada Dip as part of our rainy day spread. It's getting hot in here. So take off all your clothes! Okay, well maybe not. But that's what the enchiladas in my house did. These enchiladas have no clothes on! Can you believe it? Tortilla-less enchiladas. Shame, shame! Naughty enchiladas. Actually, they aren't naughty at all! Some people call these 'zucchini boats' or stuffed zucchini, but I'm taking it a step further and just flat out calling them as they are. Even though they are naked, they are ooey gooey cheesy and so very wonderful. I'm not mad at all that these guys are nude.
