So, this is probably one of the best desserts in the world. With two of my favorites desserts combined together into one ultimate dessert. How can you go wrong? If you love s’mores and if you love brownies, then there is no way that you won’t love these S'more Brownies even more!
The bottom layer is a lightly sweet and buttery graham cracker crust that sandwiches gooey-gooey brownie with chocolate chunks with toasty toasted marshmallows on top. So much yummy goodness all in one bite. It’s heaven in the form of a brownie, I tell you.
Pretty much the only thing I could or would do to make these brownies a little better-for-you was to cut down on the sugar. I subbed half of the sugar for stevia, but you can use whatever sweetener you prefer so long as it measures cup for cup like sugar.
It doesn’t get much better than this.
S'more Brownies
Ingredients
- 12 Reduced Fat Graham Crackers
- 2 Tbsp. Stevia
- 6 Tbsp. Unsalted Butter
- 1/2 C. Canola Oil
- 1/2 C. Sugar
- 1/2 C. Stevia
- 2 Whole Large Eggs
- 1 Tsp. Vanilla Extract
- 1/2 C. Unsweetened Cocoa Powder
- 1/2 C. Flour
- 1/2 Tsp. Salt
- 1/4 Tsp. Baking Powder
- 1/2 C. Bittersweet Chocolate
- 2 C. Mini Marshmallows
Instructions
- Preheat the oven to 350 degrees F. and line the inside of an 8x8" or 9x9" baking dish with parchment paper with about 1" overhang.
- Lightly coat the inside non-stick baking spray and set aside.
- Place the 12 grahams and 2 Tbsp. sweetener into a food blender or processor and blend down to create crumbs.
- Add in the 6 tbsp. butter and blend again to create the mixture for the crust.
- Transfer to the prepared baking pan and tightly press the crumb mixture into the bottom of the pan and place in the oven to bake for about 15 minutes.
- While the crust is baking, whisk together the 1/2 C. oil, 1/2 C. sugar, 1/2 C. sweetener, 2 eggs, and 1 tsp. vanilla.
- Add in the 1/2 C. cocoa powder, 1/2 C. flour, 1/2 Tsp. salt, and 1/4 Tsp. baking powder and whisk to combine until no lumps remain.
- Fold in the 1/2 C. chocolate chips.
- Once the crust is done, remove it from the oven and spread the brownie batter over the top and spread to smooth into an even layer.
- Place it back into the oven to bake for 30-40 minutes or until the brownies are set and no longer jiggly.
- Once done, set the oven to broil and remove from the oven. Top with the 2 C. marshmallows.
- Place the dish under the broiler for about 2 minutes to char the marshmallows to your liking.
- Remove from the oven and set aside to cool for 30 minutes before cutting and serving to enjoy!
