So this weekend a pretty amazing thing happened, American Pharoah won the Triple Crown. He was the first horse to do so in 37 years and also the first to do so the entire time I've been alive! (And I'm turning 30 this year!) My family has been watching the derbies together for the past several years now, a tradition that I believe started sometime when I was fresh out of college. I've been dreaming of the day since then that I would get to see a horse take the triple crown. And man... was it worth it.
A few horses have come close, winning the Kentucky Derby and the Preakness... but, falling short of winning the final of the three at the long track of Belmont. For whatever reason, this year was different. There wasn't nervous tension in the air, but more of an excitement. Everyone just wanted American Pharoah to get it done. Let's see it already. Let's do it!
In honor of all the races this year, I've held a family 'viewing party' where all the food/meals have been themed accordingly. For the Kentucky Derby we had none other than the famous Hot Brown. So good. For the Preakness it was all about high tea, finger sandwiches, and petit fours. Naturally, for the Belmont we went with New York hot dogs, New York style pizza, and this Skinny Cherry Cheesecake Dip, yum!
It's supposed to take the place of it's higher fat and calorie brethren of New York style cheesecake.
Let me just tell you that this cheesecake dip is pretty amazing. It's a sweet treat that you don't have to feel guilty about indulging in. And, I did a lot of indulging on it this weekend. A lot.
I left the serving size of this dip at 8 pretty significant portions; about the size of a slice of pie, but I have to be honest in saying that with give adults in the house, even we only managed to eat about half of it. And I've got some sweet eating fools among my crowd!
Really, you could use anything you wanted to dip up this fabulous dessert. I happened to find these adorable graham crackers on sale the other day; a huge box for just $1.60 - pretty great, right? Plus, they look amazing and taste just as great!
Any other sort of 'plain' cookie or pie dippers would be just as yummy though.
A spoon would also work in a pinch. Hah!
Skinny Cherry Cheesecake Dip

The Skinny:

Ingredients:
8 Oz. Greek Yogurt Cream Cheese
1 C. Fat Free Plain Greek Yogurt
1/2 C. Powdered Sugar
1 Tsp. Vanilla Extract
1 (20 Oz.) Can Light Cherry Pie Filling
Directions:
Beat the cream cheese, yogurt, powdered sugar, and vanilla together in a medium bowl until well smooth and creamy.
Transfer the cream cheese mixture into the bottom of a pie dish.
Top with the cherry pie filling.
Enjoy right away or store covered in the fridge until you're ready to serve.
I served mine with some fun little cinnamon sugar graham crackers.
