Probiotic Chicken Salad

I'm not sure about the rest, but I know that here in Texas, chicken salad is basically a staple. No, no, no. I'm not talking about a salad with chicken on it. I'm talking about shredded chicken that's blended together with mayo, herbs, veggies, and maybe even some dried fruit to create a salad of chicken.

I've made a handful of lightened-up and healthier chicken salads in the past. But, today I wanted to do something just a little bit different. Usually in a chicken salad, you'll find dried cranberries, raisins, or maybe even cherries. So, when I heard of Mariani Probiotic Pitted Prunes, I knew exactly what I wanted to do with them.

I wanted to find a way to include them into a chicken salad. I know, it might sound crazy. But, then again... does it? There's already dried fruits in chicken salad, so why not substitute in these delicious Probiotic Prunes?

These Mariani Probiotic Prunes support overall wellness and digestive health. They are prebiotic, which is what the probiotic needs to feed off of. Did you know that prunes also have other vitamins that are great for health and wellness?

This chicken salad is delish! I thought that including the Probiotic Prunes in it would make it a little more sweet, but it that wasn't the case at all! I served mine for a light lunch with some seeded crackers and plenty of celery for scooping. But, it would be yummy on a sandwich or stuffed in a tomato too.

A very traditional chicken salad that's lightened up and infused with probiotic plums! Tastes great with crackers and veggies or on a sandwich!

Prep Time: 10 Minutes • Cook time: 0 Minutes

The Skinny:
Servings: 6 • Serving Size: About 1/2 Cup • Calories: 245 • Fat: 14 g • Saturated Fat: 3 g • Carb: 13 g • Fiber: 1 g • Protein: 18 g • Sugar: 2 g • Sodium: 124 mg

Ingredients:
• 2 C. Cooked & Shredded Chicken Breast
• 1/2 C. Mariani Probiotic Pitted Prunes
• 1/4 C. Light Mayonnaise
• 1/4 C. Plain Fat-Free Greek Yogurt
• 1/4 C. Chopped Walnuts
• 1/4 C. Chopped Apple
• 2 Green Onions, Sliced
• 1 Lemon, Juiced
• 1/4 Tsp. Garlic & Herb 'Salt-Free' Seasoning (Or seasoning of choice.)
• Salt & Pepper to Taste

Directions:
Mix everything together in a large bowl.

Cover and chill in the fridge for 1-2 hours or until cold.

Serve as desired and enjoy!
