It’s meatless. It’s Monday. It’s a meatless Monday! These Greek Spinach & Feta Veggie Patties are as tricky and as tasty as they come. I made these patties with a vegetarian ground plant-based ‘meat’ which looks like, tastes like, and cooks up just like ground beef. I loaded these quarter pound patties up with spinach, sun-dried tomatoes, and of course some feta cheese to give a little bit of a Greek or Mediterranean twist.
And let me just tell you, they are so sooo good and end up being perfect on their own or as burgers! This time I decided to serve them up all on their own with some roasted veggies for a well rounded meatless, guilt-free, and delicious dinner.
As you can see, these patties are fully LOADED with the good stuff too. I’ve spared no expense in the calorie category and packed in as much of those full flavored and delicious veggies as I could manage. each bite is full of flavor and texture.
And they still end up being around 300 calories. Not bad at all considering the goodness of that feta cheese in there!
Greek Spinach & Feta Veggie Patties
Ingredients
- 5 Oz. Baby Spinach
- 1 Lb. Plant Based 'Ground Meat'
- 2 Oz. Reduced Fat Feta Crumbles
- 1/3 C. Chopped Sun-Dried Tomatoes
- Salt & Pepper to Taste
Instructions
- Lightly coat the inside of a skillet with non-stick cooking spray and cook the spinach over a medium heat until wilted.
- Transfer the spinach to a large mixing bowl along with the 1 Lb. plant based ground 'meat'. 2 Oz. feta, 1/3 C. sun-dried tomatoes, and salt & pepper to taste.
- Divide the meat equally into four pieces and shape into patties.
- Cook the patties over a medium to medium-high heat for 3-5 minutes per side or until the internal temperature reaches 160 degrees F.
- Once done, remove from the heat and enjoy right away!
