It’s the weekend so why not do a little bit of meal prep work ahead of the work week? These Cheeseburger Salad Jar are super easy to make and are the equivalent of a cheeseburger turned into a salad and then shoved into a jar for ease of grab-and-go lunch on the run. It’s got everything in there that you know and love about a traditional cheeseburger.
Ground beef, lettuce, tomato, pickles, cheese, and of course special sauce for dressing! It doesn’t have to stop there either. I also drizzled a little bit of ketchup and mustard over mine because it gave it even more of that cheeseburger feel!
I kept this salad light by using a lean ground beef. I also subbed in some greek yogurt for sour cream when it came to making the ‘special sauce’ dressing. And light mayo was a must too! Other than that, this salad is super simple and didn’t need any other adjustments to keep it healthified.
One of the best parts of this salad is that you can eat it right out of the jar itself or if you have the time you can always serve it up on a plate and take your time enjoying it. No judgement here though! We all have to eat during the week however and whenever we can.
Cheeseburger Salad Jar
Ingredients
- 2 Tbsp. Light Mayonnaise
- 1/4 C. Plain Fat Free Greek Yogurt
- 1 Tbsp. Ketchup
- 1 1/2 Tsp. Relish
- 1/4 Tsp. Vinegar
- 1/2 Lb. Extra Lean Ground Beef
- Salt & Pepper to Taste
- 8 C. Romaine Lettuce
- 1 Roma Tomato, Diced
- 1 Large Dill Pickle, Chopped
- 1/2 C. Shredded Reduced Fat Cheddar
- 4 Tsp. Sesame Seeds
Instructions
- In a small bowl, mix together the 2 Tbsp. Light Mayonnaise, 1/4 C. Plain Fat Free Greek Yogurt, 1 Tbsp. Ketchup, 1 1/2 Tsp. Relish, and 1/4 Tsp. Vinegar. Season with salt and pepper to taste.
- Divide the dressing evenly among jars; set aside.
- Lightly coat a medium skillet in non-stick spray and set over a medium-high heat.
- Add in the 1/2 Lb. Extra Lean Ground Beef to cook until browned; about 5-10 minutes. Season with salt and pepper to taste and divide evenly among jars.
- Place 2 C. Romaine Lettuce into each jar, followed by the diced tomato and pickle divided evenly.
- Top each salad jar off with 2 Tbsp. shredded cheddar and 1 Tsp. sesame seeds.
- Seal each jar and place in the fridge to store until ready to enjoy.
