I knew that when I woke up Monday morning, something was off. And sure enough later in the afternoon after my three hour drive home from visiting family this weekend, my throat started to swell up and get inflamed. By that evening my teeth were even hurting with all the congestion that had started to form!
Thankfully, I had gotten things pretty much in order before I left - for the week to come. My shopping list was ready to go and my meal plan was complete. Here's to planning ahead! All I had to do was make through the daunting trip to the grocery store and I'd be set.
With getting things back organized, I was sure to plan simple meals for this week, so this 5 ingredient stroganoff was a must.
With only being a few hours away, the weather difference between Dallas and Austin is tremendous. And after a weekend of being out and about in the cold and even some rain, I was more than happy to put this nice warm stroganoff together.
For me, stroganoff is a comfort food at it's best. Hearty, full of flavor, and made with a minimal amount of ingredients or preparation. I made this meal leaner by using a lean stew meat and bulking it up with plenty of onions and mushrooms. The longer it all cooks in the crock pot, the more tender the meat will be in the end, so I kept mine cooking for almost the entire day.
To make this even lighter, I served my stroganoff over zucchini noodles instead of the typical egg noodles. Why? Because it's an easy and delicious swap to make for noodles! I just used my spiralizer with the one flat blade attachment to get the wide 'thick' noodle shape that I wanted.
I also topped this stroganoff with a drizzle of half greek yogurt and half horseradish sauce mixture, and served it with a side of a few green beans for extra-extra green vegetables. In my book, you can never have too many vegetables.

Ingredients:
1 1/2 Lb. Lean Stew Meat
8 Oz. Mushrooms, Sliced
1 Onion, Chopped
1 Stubb's Smokehouse Bourbon Cookin' Sauce & Seasoning Pack
2 Garlic Cloves, Minced
Directions:
Toss all the ingredients into the crock pot together and give it all a good stir.
Secure the lid and cook on low for 6-8 hours or on high for 4-6 hours.
I like to stir mine in between the cook time.
Once done, divide evenly among bowls and serve as you desire. Enjoy!
