It's pretty rare that I eat fast food. Really. Three times a year, maybe.
Generally, when I find myself craving the bad stuff... the root of such evil is Taco Bell. One of my favorite bad habits is the infamous 'Mexican Pizza', with a whopping 540 calories. Which... if you think about it... that's not too bad for a bite of fast food. There is definitely worse out there. But, that bad boy is full of mystery and controversy.
I think I'll make it myself, at home, for half the calories and with ingredients that I have control over.

The Skinny:

Ingredients:
12 Carb Balance Whole Wheat Flour Tortillas
1 Lb. Extra Lean Ground Beef
1 Tbsp. Taco Seasoning
3/4 C. Faux Refried Beans
8 Tbsp. Enchilada Sauce
3/4 C. Shredded Lettuce
6 Tbsp. Fat Free Cheddar Cheese, Shredded
2 Green Onions, Sliced
1 Roma Tomato, Diced
Directions:
Preheat oven to 350 degrees F. Place tortillas on a baking sheet and bake for 10-15 minutes until crispy. In the mean time, brown the meat over medium-high heat in a large skillet until no longer pink. Season with taco seasoning and cook for another few minutes longer. Remove from heat and set aside.
Remove the tortillas from the oven and spread 2 tbsp. refried beans over 6 of the 12 tortillas and top that with about 2 tbsp. of the ground beef. Sprinkle dash of enchilada sauce over the beef and top with the second tortilla. Spread 1 tbsp. of enchilada sauce over the top of the second tortilla, followed by 1 tbsp. of cheese.
Place the pizzas back into the oven for another 5-10 minutes, or until the cheese is melting. Remove from the oven and top each with 2 tbsp. shredded lettuce, green onions and tomato.
