I'm not gonna' lie. We had a donut emergency in the house today.
My darling little girl crawled into bed this morning, as per the norm, and for this reason or the other... clarified that 'dis is a bad day'! And when opening the curtains I realized that she was at least half right. Overcast, cold, and rainy.
Donuts (and coffee) always put a smile on her face though ...So I quickly trotted downstairs and rummaged through the pantry. DONUTS. Chocolate and healthier? Yes. Please. I'll make this day better yet!
The average donut out there will cost you a good 300+ in the donut department... and to be honest won't taste half as good. These are warm, chocolatey, bursting with berries, and a glaze that is out of this world.

Donuts:
2 Large Egg Whites
1/2 Ripe Banana
1 C. Fat Free Milk
1 C. Cake Flour
1 C. White Whole Wheat Flour
1/4 C. Dark Cocoa Powder
1 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/2 C. Semi-Sweet Chocolate Chips
1/2 C. Frozen Mixed Berries
1/4 C. Brown Sugar
1/8 C. Unsweetened Apple Sauce
Glaze:
1/4 C. Frozen Mixed Berries, Thawed
1/2 C. Powdered Sugar
Preheat your oven to 325 degrees F. Spray your donut pan with cooking spray and set aside. Meanwhile, beat the eggs, milk, applesauce and banana together. Add in the remaining ingredients and stir until combined.
Spoon the batter into the donut pan, filling to a little under 2/3 full. Bake for about 15 minutes. Allow them to cool for 5 minutes in the pan, then transfer to a cooling rack to cool completely. In the meantime, prepare the glaze.
To make the glaze mix together the berries and powdered sugar. I really wanted to add some greek yogurt to the glaze as well, but I had a toddler on my hands that saw the donuts come out of the oven and suddenly thought she was starving!
