It’s almost the weekend and that means it’s time for some meal prepping! This Overnight Pumpkin Spice Oatmeal is a great way to get that pumpkin spice goodness of Fall in there for breakfast with minimal effort. And I do mean very minimal.

Fresh Turkey Salad

I’ve decided to call this ‘fresh’ turkey salad because I loaded it up with plenty of fresh fruits and veggies. No nuts. No dried fruits. Fresh, fresh, FRESH! I borrowed the base of this recipe from my Skinny ‘Leftover’ Turkey Salad, and made just a few tweaks and adjustments to get it to something that was a little more… fresh!

And now for the speech! Turkey salad as in chicken salad. Not a salad with chicken or turkey on it. But, rather a ‘salad’ that’s made up WITH turkey and chicken. The sort of thing you can smear on some toast for a turkey salad sandwich, or load on top of crackers…

This Black & Blueberry Smoothie is quick and so SO easy to make with just a handful of simple ingredients and a quick whirl around in the blender. This has been one of my go-to breakfasts for about two weeks now. And let me just say, that I’ve never been one to be that big into smoothies before. I’ve always preferred to eat my meals as opposed to drinking them.

But when it comes to this smoothie? I am totally fine with drinking it. In fact, it’s probably one of my all time favorite things for breakfast right now. It fills me up and gives me plenty of energy to get through the day…

With September being National Cholesterol Awareness month, and the fact that I'm not all about frying, I put my noodle to work to come up with a better-for-you baked version of Southwest Egg Rolls. So, with a little research and a lot of love, I'm pretty sure I got this one 100% right.

Egg roll and wonton wrappers have been a pretty big part of my kitchen play time lately. I just love how versatile they are. Plus, they are lower in calories than most other doughs. So, to keep these Southwest Egg Roll better-for-you, I made a few careful swaps. First, I used chicken breast as a leaner cut of meat.
