Double Chocolate Pumpkin Bread

I’ve been in bread mode lately for breakfast, if you couldn’t tell. And with the influx of cooler weather and it officially being Fall now, of course I had to get with baking up some chocolate pumpkin bread. Not just that though. DOUBLE chocolate pumpkin bread. This tasty breakfast treat is as rich as it comes and sooo decadent.

The pumpkin and applesauce being in this bread means it’s super moist and you barely need any oil in it at all. I kept it as low as I could with sugar by substituting in one of my favorite swaps, a brown sugar/sweetener blend. You’ll never know the difference in taste either! That one single swap will nearly cut the sugar in half…

Everyone loves a loaded baked potatoes, but what if you could make them even better by making them a finger food, portable, and perfect for any side dish or game day appetizer spread? These adorable Mini Baked Potatoes are just that. Plus, being cute and little as a perfect one or two bite snack is great.

Roasted in olive oil and salt before being FULLY loaded with all the staples of a good baked potatoes. They take under an hour to make and most of that is hands-off time while the oven does all the work. 'Everything' Salad

This 'Everything' Salad is just that, everything. It’s based off the famous ‘'Everything' bagels that are known for their ‘everything’ seasoning that you can now buy at just about any grocery store. While I’m not generally a fan of croutons, I decided to grab some of the bagels and use them to make croutons for the salad. That paired with a homemade dijon dressing and some cream cheese makes for one great salad.

I decided to leave this salad meatless, making it a great option for a meatless Monday meal, but feel free to add some chicken or whatever other protein you might enjoy to the salad. This salad would also be great for a meal prep lunch box. Make it ahead of time and enjoy through the week!…

Hot & Sour Soup

I’ve gotten to where I make veggie sushi about once a week, or at least once every couple of weeks. This Hot & Sour Soup is an easy and delicious side to pair with the sushi. It’s super quick and easy to make all in one pot and it tastes even better than the one you order with take out. What’s even better is that you get to have control over just how hot or sour your soup is in the end.

I have seen a little difference in hot and soup soup out there. This one, to me, is more of a mixture between egg drop and hot and sour. I’m totally fine with that. I love egg drop soup as much as I do hot and sour. But, it is worth noting that you do DROP EGGS into this soup. It can be a scary thought, but I promise it’s easy peasy!…

It’s been a weird year, and it looks as if it will continue to be a weird year through to the very end. Even with all the craziness that’s going on in the world, it keeps turning and the seasons keep changing. Crispy Baked Chicken Taquitos

I love taquitos. You know the ones. The ones in the freezer section that you bake at home and end up with a plate of several perfectly rolled crisp taquitos loaded with beef, chicken, or beans and cheese. My problem though has always been that they were almost impossible for me to get right at home. That is until now.
