Instant Pot Poached Eggs

It’s been a good long while since I had some eggs for breakfast and if I’m being very honest? I’ve never had a poached egg before in my life. I’ve had them just about every other way there is other than poached. So, this morning I decided to try my hand at it. However it’s summer and I’m lazy. Instant Pot to the rescue!

Oh, how many times the Instant Pot has saved me.

These eggs are cooked up in no time and require NO technical or cooking skills what-so-ever. That’s right. these poached eggs are cooked right in the pressure cooker and you can play around with the timing to get them exactly where you want them as far as yolks go…

Craving for something easy and cheesy? Look no further! This Zucchini Cheeseburger Skillet is easy to make, all in one skillet, and has all the cheesy goodness of a cheeseburger without any of the guilt. I based it off the same idea as my Zucchini Taco Skillet, but used cheeseburger components instead of taco. The end result was this burger in a bowl.

I made sure to load this skillet up with plenty of veggies, zucchini, onion, lettuce, and even some fresh tomato! Like I said, this has everything you love about a cheeseburger, even pickles! Skinny Greek 7 Layer Dip

I’ve been wanting to make a Greek version of a 7 layer dip for a while now and I finally got the chance today! The AC is being replaced and lets just say that with no AC and the heat index being well into the triple digits we needed something cool and light to munch on. That’s where this Greek 7 Layer Dip comes in.

Layer one is a seasoned cream cheese spread, layer two is hummus because hummus is yummus! For layer three you have zucchini (or cucumber), layer four is fresh diced tomato, with layer five comes some of my most favorite olives - kalamata. Towards the end is layer six with crumbled feta cheese, and finally layer seven is your sprinkling of green onions…

Spring Vegetable Crustless Quiche

I’ve made a lot of crustless quiches in the past, and with Spring in full swing, I decided to make one that used up the bounty of veggies that Spring offers up such as spinach, mushrooms, and asparagus. Unlike some of my other quiches, I wanted this one to be the absolute start of the plate. So, I stuffed it full of veggie goodness, used more eggs, less milk, and ended up with a low calorie, high flavor dish that was perfectly suited to Spring.

I think one of my favorite things about quiche has to be that it can literally be enjoyed as a meal at any time of day; breakfast, brunch, lunch, dinner… any and all! It’s Spring and for me that means it’s time to play around with all things lemon and poppy seed. This Lemon Poppy Seed Chicken Salad is a fun twist on a classic chicken salad. That’s chicken salad, not chicken in a salad. Most of the time when you think of lemon and poppy seed, you think of sweet treats. But, not today!

Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

So what’s caprese anyway? It’s generally a salad that includes tomatoes, cheese and either pesto or some sort of balsamic reduction.
