Halloween is coming, y'all! I know it's a little bit early, but I can't hold it in any more!
I'm always excited for Halloween to roll around, but this year even more so. I was a little too late in testing out these cookies last year to have them here in time for Halloween, but this year... I made good and sure they were the first Halloween treat to make the list!
These cookies are soft, sweet and perfectly delicate. Plus, they're super cute and festive for any Halloween gathering...
A fresh local butternut squash means Fall is finally here! I love it when I start to get my hands on winter squash. They are easily one of the most tasty and versatile foods out there. Anywhere from stuffing them, to roasting them, to mashing them as a puree. I'm sold. Hook, line, and sinker.
Not only are these tostadas easy to make, they're also a meal you can make off of one baking sheet; making it a perfect weeknight go-to for any busy family. And believe you me... I've been one busy gal! Friday really tested my limits and put me through the ringer. I ran around like a crazy person getting my daughter into her doctor and off to get an x-ray on her little footsie. So, I knew dinner was going to have to be supremely quick and hassle free...
So, this salad today is actually somewhat inspired by my dad who is having some health issues at the moment. We're not entirely sure what's going on, but he's been told to eat better for the time being until his next round of testing. One thing he was told to do was to 'stay away from white stuff', which clearly isn't something I stuck to here because I have to have cheese in my life. I literally think I might explode if I didn't have at least a bit of cheese every day.
What can I say? I've got to be honest here! I'm one that believes strongly in that you can enjoy everything as part of a healthy diet as long as it's in moderation. (Except of course if it's something you've been warned of by a professional.)
A few days back now, my dad and aunt were chatting at me on Facebook about how my dad is now eating more healthy and that he had tried quinoa. He wasn't a huge fan. So, I gave him some suggestions and got to thinking that some quinoa sounded really good actually. And here we are with this lovely Kale & Apple Quinoa Salad!...
A little chicken noodle soup for the soul, anyone? 2016 has been a year that will go down in infamy. I don't think this year hasn't touched everyone in a particularly strange (and I'll even dare to say negative) way. I for one, couldn't be more happy to see it in it's last several days. I know that 2016 will go out kicking and screaming the entire way, but I can't wait to see what next year brings.

My Christmas tree bit the dust last year, and I guess that should have been a sure sign of the things to come. So, I decided to add some extra Christmas tree to my life this year by including it in this soup as early as November. MOVE OVER DECEMBER. We're getting this year done and over with...

Occasionally, for one reason or another, I have started going through to rework certain older recipes. Some of them needed photography updates, others were outdated in other areas, this one though... it needed a total overhaul. My way of cooking and my thoughts towards food have changed immensely over the years as I've grown and started to come into myself as a home cook and health nut.
I never did like the original pictures that I shot to pair with this recipe, and while the recipe tasted amazing... I knew looking back at it that I could do much better by my standards today. Since we're still in the midst of pumpkin season, I thought it would be the perfect time to blow the dust of this oldie but goodie...

Phew! Now that Halloween is over, it's time to move on to the next great holiday in our paths. I think next to Halloween, Thanksgiving is my second most favorite holiday. Why? Well, that's pretty simple; it revolves entirely around food. It's no secret that I love food. Plus, Thanksgiving is full of good memories for me. When growing up, my mom always did her best (even in the worst of times) to make it amazing, memorable, and full of traditions for myself and my little brother.
Every year my mom would make two pies, a classic pumpkin one and a chocolate meringue. Sometimes she would throw a third in there, usually a pecan pie of some sort. This year though, I'm shaking it up. I'm putting a twist on two old classics and making them into one brownie bottom delectable pumpkin pie that is sure to please everyone.
