Healthified Breakfast Rice Cereal

I remember back when I was little, my mom would make my brother and I 'Breakfast Rice' which was full of butter, sugar, and warm milk. It. Was. Fantastic. Truly one of my fondest breakfast memories.

My little girl has been a rather picky eater for the last year or so. Thankfully, I have been able to get her to at least try new things over the most recent months. Skinny Shepherd's Pie

I'm irish and... rather proud of it. Even so, the first time I ever had Shepherd's Pie was when I cooked it for myself. It was a rather easy recipe to prepare and of course goes along famously with St. Patrick's Day.

Now, I've never been to Ireland, so I can't really say whether this is a traditional style variation or not. Though from what I can tell, every recipe seems to be different - just with the basic idea that meat and vegetables make up the bottom layer while potatoes of some sort are spread over the top...

Healthified Chinese BBQ Pork (Char Siu)

The Chinese New Year was a few days ago (well... okay... almost a week ago...), and I really wanted to have this recipe posted in time but... it just didn't happen that way. Oh, well!

Char Siu or 'Chinese BBQ Pork' literally translates to 'fork burn/roast'. It's usually well known for it's bright red colored outside layer caused from marinating and cooking in a traditional glaze sauce.

This is my healthified version of Chinese BBQ pork. It's typically made by roasting a pork shoulder in a special sauce, chopping it, skewering it, and charring it with more sauce to glaze. Well, sometimes less is more...

Skinny Apple & Gorgonzola Pizza
