Strawberry Shortcake Waffles

I’ve made strawberry waffles before, but I was in a bit of a rush today so I thought instead of making them from scratch, I’d save some time with a box mix. Also, there’s a trick to packing as much strawberry goodness into baked goods as possible without adding moisture and that’s by way of powder!

I added plenty of dried strawberry powder to my favorite protein packed waffle mix along with some vanilla to doctor it up as well. Chunky Monkey Waffles

We all know that fun flavor of ice cream ‘chunk monkey’. It’s been one of my favorite of Ben & Jerry’s ever since I knew of it’s existence. It’s certainly not common to come across a banana ice cream, but let me just say, it’s so so good. Something about the banana and the chocolate chunks and pieces of walnut are amazing.

Toaster Oven Egg-In-A-Hole

I feel like I keep saying ‘it’s at that point in the year when I’m too busy to…’ when in reality… I’m just always too busy. I remember hearing once, that while parenting, things get easier in some ways but harder in others. And let me just tell you, that’s the truth. I don’t spend the same amount of time toting the little around from dance class or cheer practice, that’s true. I do spend more time checking in, going to appointments, and working on homework and bigger projects.

Huevos Rancheros Casserole

Huevos Rancheros is a traditional Texmex dish that’s usually served for breakfast or brunch… or maybe even lunch. It’s a little bit like a breakfast taco in that it involves tortillas and eggs, but it also usually has ranchero sauce and beans too.
