Cranberry Orange Bread

December 21, 2019 Amanda Plott
cranberry-orange-bread8.jpg

While it’s cold enough outside for a few more months, I’m planning on doing a lot more baking and using up precious oven time while I can. The heat of the summer (and sometimes spring) often keeps from being able to comfortably bake anything. At all. Ever. To keep on theme with the Holidays, I thought I would whip up a festive bread for breakfast this morning.

This Cranberry Orange Bread is loaded with flavor, the freshness of the orange and the tartness of the cranberry pair well with the sweetness of the bread. Plus, it’s pretty easy to toss together in the morning and bakes for a good amount of hands off time…

Giant Donut Cake

December 14, 2019 Amanda Plott
donut-cake9.jpg

My daughter is pretty much obsessed with donuts. Seriously, once a week she gets to have donuts for breakfast. Usually it’s from a local donut place, but this morning I decided to take it up a notch. I’ve been working on the notion of a giant donut cake for a while. And if you follow me over on Facebook or Instagram you may have seen my most recent attempt.

I was sooo close, but it still wasn’t perfect. And I never want to share a recipe that I’m not completely in love with. Whether it has to do with the recipe itself or with the aesthetics of it all. This last time was a painful lesson with sprinkles and frosting. Today though? I got it all right!…

Skinny Overnight Eggs Benedict Casserole (With Blender Hollandaise)

December 12, 2019 Amanda Plott
eggs-benedict-casserole12.jpg

Breakfast is the most important meal of the day, they say. And I tend to agree. If you start your day off right with a nice breakfast, the rest of the day tends to follow suit. One of my all time favorite breakfast (or brunch) items is eggs benedict. A simple breakfast bite with english muffins, eggs, and hollandaise sauce. However, with the holidays coming up, I tend to gravitate towards casseroles.

So, why not turn a classic breakfast dish into a casserole? This Skinny Overnight Eggs Benedict Casserole is really simple to make and is pretty similar to a strata or a quiche. The only difference really is the use of english muffins and the added hollandaise sauce…

Sausage, Apple & Baby Kale Whole Wheat Strata

November 26, 2019 Amanda Plott
sausage-strata12.jpg

Thanksgiving is in just a few days and when the Holidays are rolling in, I like to be sure that I have breakfast taken care of. Strata is a great way to use up what you have on hand. They’re pretty flexible and can be made ahead of time to have a breakfast (or brunch) ready to go for a whole crowd of people. Mhm, that’s right. This breakfast makes a whopping 12 servings!

This Sausage, Apple & Baby Kale Whole Wheat Strata is a real winner, and if you haven’t had a strata before, you definitely should! It’s sort of a cross between a savory bread pudding and a quiche…
