The great Christmas and New Year dessert debate is in full swing! It seems like every year my Mother and I get into ‘the great debate’ over what cookies and desserts we’re going to be making for the holidays. She likes this. I like that. Skinny Gingerbread Granola

‘Tis the season. …Gingerbread season, that is!

Gingerbread is the spice of life, especially as we get closer to Christmas and the New Year. I took a leap of faith last week and ordered some vegan almond ‘egg nog’ from one of my favorite almond milk creators. They’re local here to me in Austin Texas, and while I like the flavor of egg nog… raw egg in my drink sorta… freaks me out a little bit.

So with my vegan almond milk in hand, I decided that I needed some granola to go with it. I’ve made a lot of granola lately. This morning I woke up to a rather quiet house after FINALLY managing to get a decent bit of sleep last night. The excitement around the holidays, along with all the coming and going from my house, usually means several restless nights for me. Now with Turkey Day out of the way, I’m ready to get back into a routine for a few weeks.

My fridge once again has space in it and leftovers have all cleared out but now. I’ve somehow done it, y’all. I’ve somehow managed to wear myself out on pumpkin for a bit. I don’t know how, I don’t know when, and I really don’t like it. But… at least in the meantime while I recuperate, I can play around with cranberries now!
