Easy Peanut Butter & Jelly Waffles

August 16, 2017 Amanda Plott
pbj-waffles3.jpg

It never fails. Every year around back-to-school, I get stuck on the notion of PB&Js. In the past, I've made parfaits, oat bars, and even sandwich cookies in the theme of PB&J. This time thought, I wanted to put a spin on an old breakfast classic. The waffle!

Of course, speed and ease are a huge thing with back-to-school. Especially in those first couple of weeks when you're busy getting back into the routine and setting yourself and your kids up for a successful school year. It's a lot of work, mommas. I know it! That's why I wanted to make these Easy Peanut Butter & Jelly Waffles...

Mermaid season is coming to an end just summer does. But, I thought that I would get one more good mermaid inspired dish out there before then. With back-to-school hot on our heels I thought that a perfectly simple and oh-so desirable on-the-go breakfast, snack, or treat would be the way to go.

This is one of those delicious snacks that are better-for-you but take little time or effort, making it perfect for back-to-school chaos...

Caprese Omelette

July 27, 2017 Amanda Plott
caprese-omelette8.jpg

It's grocery shopping day, which means that I have absolutely nothing in my house other than the leftovers and things that weren't used up through the week. With a hungry household, what's a girl to do? Improvise!

Somehow one of the dinners that I had planned wasn't even made. What can I say? It's summer and we're flying by the seat of our pants here on somedays. A good thing for fun, but a bad thing for planning. Whatever caprese salad I had intended on making just didn't fit into our shenanigans... so, caprese style breakfast it is...

Is it me or has everyone else noticed the 'power bowl' trend that's been taking over the foodie world lately? I'm not mad at it at all either. I love me a good bowl of power. Morning, noon, or night. I mean.... I'm a momma of a really active 7 year old, so I've got to stay on top of things with plenty of energy and strength.

While it's so hot out right now in the blazes of 'Texas in July' heat, I tend to opt for the simple, easy to put together, no heat involved style of cooking. At least until it cools off enough in a couple of more months to where I can feel comfortable with turning my stove and oven back on for any amount of time. This Cinnamon Roll Power Bowl fits the bill in every way. It's filling, light, easy to make, and wholesome to boot!...

Summertime always makes me think of strawberries. I always have plenty of them in the fridge during the hot summer months, mostly because myself and my daughter go through them in mass quantities. I love strawberries so much so that I even often add them to cereal at breakfast. So I thought, why not base a warm summer breakfast cereal off of that?

This Summer Strawberry & Coconut Breakfast Cereal is easy, tasty and light. Making it the perfect summertime breakfast bowl. I like to make a batch of it ahead of time to have on hand for a good three days worth of breakfast bliss that keeps me strong, full, and on track with my health goals...

It's hot here in Texas. Like... real hot. As in, I can't use my oven anymore sort of hot. As in... your only escape right now is a body of water. Hm... that gets me thinking. About what, you ask? MERMAIDS. I've been head-over-heels in love with Unicorns for a while now. Buuut, when the summer rolls around, the inner mermaid in me comes out. It's time to splash around and have some fun!

This mermaid smoothie is the perfect summer treat. And what's better is that it will keep your figure seashell ready all season long while keeping you full and completely satisfied. It doesn't hurt that it's as pretty as a mermaid to boot. Tasty, healthy, and beautiful too? Yep! It's a winner all the way around...
