Craving for something easy and cheesy? Look no further! This Zucchini Cheeseburger Skillet is easy to make, all in one skillet, and has all the cheesy goodness of a cheeseburger without any of the guilt. I based it off the same idea as my Zucchini Taco Skillet, but used cheeseburger components instead of taco. The end result was this burger in a bowl.

I made sure to load this skillet up with plenty of veggies, zucchini, onion, lettuce, and even some fresh tomato! Like I said, this has everything you love about a cheeseburger, even pickles! I’ll be real honest, it’s been a pretty rough week for me. My mom had surgery and I’ve been down and out with almost a full week of some sort of strange migraine or headache of some sort. There is only ONE more month of school left here and it is busier than ever! What does that mean? Easy cheesy weeknight meals are where it’s at! That’s where this Cheesesteak Macaroni Casserole comes in. Not only is this casserole easy AND cheesy, it’s also one that you could make ahead of time and then toss in the oven for the final step when it’s time for dinner!

Jamaican Chili

So, I wanted some chili but with it being Spring I wanted a chili that maybe had a little more of a brightened up twist to it. That’s why I came across the idea for a Jamaican themed chili. It’s basically a pretty standard meat and bean chili that’s got all the delicious warm and bright flavors that you tend to see in Jamaican dishes.

There is some heat to this chili, but not a whole WHOLE lot. If you want it to be a touch hotter, try using a hotter pepper in place of the jalapeño. Think habanero or scotch bonnet! I’m not quite that brave myself so I stuck with the jalapeño…

With one of my favorite holidays coming up (St. Patrick’s Day) I thought it was about time to start rolling in a few fun takes on Irish dishes. One of our family favorite Irish bites has to be corned beef. It was actually one of the first meats that my picky-eater of a daughter would eat!

Look, sometimes a girl just needs to eat some BBQ. I’ll be honest, I’ve never actually cooked ribs on my own. I’ve eaten plenty of them. But cooking them? It just sounds scary!
