Many years ago I started making my own spaghetti sauce. Don't get me wrong, jarred spaghetti sauce has it's place and time in my life too. But, when given the option, I will always prefer making my own. I've made several types and kind. Some in the crockpot, others with meatballs, this one though is easy, simple and full of tomato flavor.
This Zucchini Noodle Spaghetti is a perfect weeknight dinner to make when you're looking for something quick and easy that is also guilt-free and a more wholesome option. The sauce here is loaded up with big hearty chunks of tomato, onion, garlic, and fresh basil (the secret weapon.)

The Skinny:

Ingredients:
1 Tsp. Extra Virgin Olive Oil
1/2 Medium White Onion, Chopped
1 Garlic Cloves, Minced
1 (14.5 Oz.) Can of 'No Salt Added' Diced Tomatoes
1/2 Bunch of Fresh Basil, Chopped
1/2 Tbsp. Red Wine Vinegar
1 (12 Oz.) Package Green Giant Veggie Zucchini Spirals
Salt & Pepper to Taste
Optional Topping: Grated Parmesan
Directions:
Heat the oil in a large pot over medium-high heat and add in the 1/2 Medium White Onion to cook for a couple of minutes or until becoming tender, then add in the 1 Garlic Cloves.
Pour in the Can of 'No Salt Added' Diced Tomatoes into the pot, along with 1/2 Bunch of Fresh Basil, and 1/2 Tbsp. Red Wine Vinegar.
Bring it all to a boil then cover and reduce the heat to simmer for about 15 minutes.
While the sauce is cooking, cook your Green Giant Veggie Zucchini Spirals according to the package directions.
Once the Green Giant Veggie Zucchini Spirals are done and the sauce has simmered, toss them together in the same skillet to finish off. Season with salt and pepper to taste.
Divide evenly among bowls and give each a little sprinkle of grated parmesan cheese if desired and enjoy right away!
