By now, it's no secret that I'm always making sneaky swaps in the kitchen for more wholesome options at the dining table. It's not very often (if ever) that I get any sort of complaint, much less notice being taken. Like I said... they're sneaky swaps. The way I see it, if I can get it past my picky eating family, everyone else is golden.
Honestly though, this Vegan French Toast has to be one of my all time favorite sneaky swaps. Why's that? Because it's so amazingly good. Even if you're not a huge fan of banana (and I know there's some of you out there) I implore you to try this recipe! The banana flavor is very light and subtle among everything else that french toast has going on. It's simple, tasty, and a guilt-free way to enjoy one of the classics.
It did take me a few attempts to get this recipe perfected, but the end result turned out great and was well worth the effort I put in! The trick to this Vegan French Toast is, of course, the banana. It's a great substitute for eggs in a lot of recipes, and especially this one.
Banana is a very moisture rich fruit though, so you have to counter act that a bit by using a denser/firmer sliced bread and to toast it lightly before dipping it into your mixture to cook. This gives you that familiar traditional french toast bite that I know you're craving.

Ingredients:
2 Ripe Medium Bananas
3/4 C. Light Almond Milk
1 Tsp. Vanilla Extract
1/2 Tsp. Ground Cinnamon
8 Slices Dense/Firm Vegan Bread, Lightly Toasted
Directions:
Place the 2 Bananas, 3/4 C. Almond Milk, 1 Tsp. Vanilla Extract, and 1/2 Tsp. Ground Cinnamon into a food processor, blender or small bowl for an immersion blender.
Blend until smooth and creamy.
Melt 1/2 tsp. of Eath Balance Buttery Spread in a small skillet over medium-low heat.
Dip a slice of toast into the banana mixture to coat both sides evenly.
Place the dipped toast into the hot skillet and cook for about 2 minutes per side or until starting to turn golden brown.
Continue with the remaining slices of toast.
Divide the french toast evenly among plates (2 slices per serving.)
Serve warm right away with syrup of your choice and a little more Earth Balance Buttery Spread.
